kitchens of the Unite-1 Fresh Fruit

Banana Chocolate Pudding
1 package chocolate puddingemix
2 cups milk
30 vanilla wafers
3 medium bananas, sliced
le cup heavy cream, whipped
1 tablespoon sugar
teaspoon pure vanilla extract
Combine pudding mix and milk
in a saucepan. Stir and cook over
medium heat until mixture comes
to a full boil, Remove from heat
Pour into a bowl, iPlace waxen
paper directly on surface of hot
pudding to prevent a surface film;
Chill. Line the, bottom of a 1-quart
casserole with a layer of vanilla
wafers. Top with sliced bananas,
Cevar with a layer. of chocolate
pudding, Repeat until all ingred-
ients are used, having pudding as
top layer. Chill until ready to
serve, Just before serving, sweet-
en whipped cream with sugar and
add pure vanilla extract, and spread
on the top.
Yield: e to k servings,
Bakeel Banande
fi firm ripe, not too soft, bananas
2 tablespoons fresh lemon juice
' teaspoon salt
1 1 teaspoon ground nutmeg
', teaspoon ground cinnamon
a cup honey
l e cup maple syrup
1 tablespoon butter or margarine
Ii thin slices lemon or lime
Whipped cream, optional
Peel and split bananas In half,
Brush with lemon juice. Place in
buttered baking dish. Mix salt,
spices. honey and maple syrup and
pour over all. Dot with butter or
margarine. Top each banana with
lemon or lime slice. Bake in a pre-
heated moderate oven 8359 deg. F.;
20 to an minutes. Baste bananas
with spiced syrup during baking
period, Serve as dessert with whip-'
ped cream or serve plain.
Yield: a servings.
Banana Pie
Baked 9-inch pie shell
5 medium bananas
'e cup sugar
1 tablespoon fresh lemon juice
1 ! cup sugar
1 teaspoon fresh lemon juice
1 cup heavy cream, whipped
1 teaspoon pure vanilla extract
Half fill a baked 9-inch pie shell
with sliced bananas mixed. with the
lee cup sugar,and the 1 tablespoon
lemop juice. Put remaining ba-
nanas through a. potato ricer, Add
remaining 1 4 cup sugar and the 1
teaspoon fresh lemon juice. Fold in
whipped cream along with. pure
vanilla extract. Spread on top of
pie. Chill, Serve the day it is made.
Yield: S servings.
Banana. Griddle Cakes
11.2 cups sifted all-purpose 'Icier
al teaspoon salt
la teaspoon ground black pepper
21. teaspoons double-acting baking .
powder
1 tablespoon sugar
2 eggs, separated
1le cups milk
3 tablespoons shortening, melted
1 cup (11 e. medium; thinly sliced
bananas
Sift first Jive- ingredient;,, to
gether, Thoroughly combine egg ,
yolks, milk and shortening, Add to
flour mixture stirring only enough
to dampen flour, Stir in bananas.
Beat egg whites until stiff and fold
into the mixture. Cook on a hot,
lightly greased griddle allowing 14
cup hatter for each pancake. Turn
to brown other side when bubbles
form on the surface, Serve hot
with butter and honey or syrup
-with sausage or ham.
Yield.: 1 1 s dozen griddle cakes.
