It tastes good with any kind of meat and, in addition, makes a different, tart and spicy, hors d'oeuvre for serving with crackers before dinner. Mushrooms, onions and tomatoes are always a good combination and the particular spices and herbs used with them in this recipe have been chosen with care, to enhance the flavours of the vegetables. The cooking time of the relish is short -only about 30 minutes-- and the recipe makes over 2 cups. Mushroom and Onion-Ring Relish 1 pound onions, sliced 11" thick 1, cup salad oil 2 tablespoons vinegar 1 tablespoon sugar 1 6-oz. -can tomato paste 1 6-oz, can water 1 clove garlic (or 1e teaspoon gar- lic powder) 13 teaspoon salt 1; teaspoon pepper teaspoon thyme 2 whole cloves 1 hay leaf 4 sprigs parsley Mix all ingredients together in a saucepan and bring to boil; boil gently 20 minutes, stirring, occas- ionally; Add 1 pint (le pound) .mush- rooms, leaving small mushrooms whole and cutting larger ones in halves or quarters. Continue cooking until onions and mushrooms are tender, about 10 minutes, then chill. Remove garlic clove, whole cloves, bay leaf and parsley sprigs. The most lopsided gingerbread man has special charm to youngsters if it's their very own. „GINGERBREAD MEN Yield-about 113 doz. cookies, 2 cups once-sifted all-purpose flour or 213 cups once-sifted pastry flour 1 teaspoon baking powder teaspoon baking soda 'h teaspoon salt 21 i teaspoons ground ginger 1 teaspoon ground -cinnamon 13 cup shortening 11 cup granulated sugar 3.3 cup lightly-packed brown sugar. 1 egg 1 i cup molasses 1 teaspoon vanilla Currants or raisins Candied, or well-drained mara- schino- cherries Sift together three times, the all- purpose or pastry flour, baking powder, baking soda, salt, ginger and cinnamon. Cream shortening; gradually blend in granulated and brown sugars. Mix in egg, molasses and vanilla; beat well. Add sifted dry ingredients, part at a time, mixing in well after each addition. form dough into a ball and wrap in waxed paper or other kitchen wrap. Chill overnight. Next day, grease cookie sheets, Preheat oven to 350 deg. P. (moder- ate). Roll out dough, part at a time, to a scant 1.1-inch thickness; cut with floured tgirigerbread-man cut- ter, Arrange the cookies on pre- pared cookie sheets. Make a face on each man, using currants or raisins for eyes and cut up cherries for nose and mouth. Bake the gingerbread 'hen in pre- heated oven 8 to 10 minutes' Cool on cake racks.
