Plum Jam las -perennial faVOrite
with adultsk'and children alike-a
Wonderful 4Pnchby in your pre-
serves iciiPbtiard! Here's our very
successful recipe. -
PLUM JAM
VA cups prepared fruit (about 2 qls.
ripe plums)
73,4 cups (334' lbs.) sugar
14 bottle Certo fruit pectin
First, prepare the fruit. Pit (do
not peel) about 2 quarts fully ripe
plums. Cut in small pieces and
chop. 'Add 3,4 cup water; bring to a
boil and simmer, covered, 5
minutes. Measure 43-i cups into a
very large saucepan. (Sour cling-
stone plums give the best color and
flavor, If sweet plums or freestone
prune plums are used, substitute
/2 cup lemon juice for ii cup of
the prepared fruit.)
Then make the jarn. Add sugar
to fruit in saucepan. Mix well.
Place over high heat, bring to a full
'rolling boil, and boil hard 1 minute,
stirring constantly. Remove from
heat; stir in Certo at once. Skim off
foam with metal spoon. Then stir
. and skim for 5 minutes to cool
slightly, to prevent floating fruit,
Ladle into glasses. Cover at once
with. A inch hot paraffin. Makes
about II medium glasses.
Preserving Pointer: It's a good
idea to temper all new glass jars
before using in order to prevent
breaking. Simply place the jars on a
rack in a pan, cover with cold water,
and then heal gradually to the boiling
point,
If you hare any problems with your
jam and jelly making, we'll be glad
to help in any way we can. Just drop
us a line, General Foods Kitchens,
