Blueberry and Currant Jam—a
wonderful addition to your
preserves cupboard.! Incidentally,
this is the jam that ranks in first
place with most kiddies!
BLUEBBRRY
AND CURRANT JAM
Yield: about 10 medium glasses
(5 lbs. jam)
.44 cups prepared fruit (about 5.1 quart
each ripe blueberries and red
currants)
7 cups (3 lbs.) sugar
34 bottle Certo fruit pectin.
First, prepare the fruit. Crush
thoroughly about 34 quart fully
ripe blueberries, Stem about 3/4W
quart fully ripe red currants, and
crush thoroughly. Combine fruits
and measure 4 cups into a very
large saucepan.
Then make the jam, Add sugar
to fruit in saucepan and mix well.
Place over high heat, bring to a
full rolling boil, and boil hard 1
minute, stirring constantly.
Remove from heat and at once stir
in Certo. Skim off foam with metal
spoon. Then stir and skim by turns
fora minutes, to cool slightly to
prevent floating fruit. Ladle
quickly into glasses. Cover jam at
once with 34 inch 'hot paraffin.

Force cottage cheese through a
ine sieve. Blend with cream or
milk cornstarch, butter or mar-
garine, pure vanilla extract and
lemon rind, Beat egg yolks until
thick and lemon colored, into which
gradually beat 's cup of the sugar.
Stir in cheese mixture. Add salt
to egg whites and beat until they
tend in soft peaks. Brush a little
over the bottom of the pie crust.

Turn into chilled cooky crumb
crust Bake in a pre-heated moder-
ate oven (350 degrees F.) 45 min-
utes or until knife inserted in
center comes out clean. Cool. Top

Peach Tapping-
3 cups sliced fresh peaches
le cup sugar
1 teaspoon fresh lemon juice
l's teaspoons cornstarch
Dash of salt
Combine peaches, sugar and le-
ion juice. Let stand until sugar

1 hour. Drain juice into a measur-
ing cup. There should be hs cup
of liquid. Blend in cornstarch and
salt. Cook until transparent.
Shortly before serving, arrange
peaches over top of pie. Spread
with the glaze. Chill.

ing than a holm-made Fresh Peach
Sherbet. This one made according
to the following recipe could not
be easier. Also it is comparatively
low calorie. Ilse soft-ripe fresh
peaches for tire puree.
Mix 1 envelope unflavored gelte-
time with hi. cup cold water and
let stand a minute. Place gelatine
bowl in a pan of hot water to melt.
Combine 1 cup sugar 2 table-
spoons fresh lemon juice, 2 cups
fresh peach puree We pounds),
1 cup milk and teaspoon salt.
Pour into a freezing tray. Freeze
until almost firm. Turn into mix-
ing bowl. Add 1 unbeaten egg
white. Beat with an electric or
rotary egg beater until smooth and .
fluffy. Finish freezing in two
trays - until firm and ready to
serve. Makes about 3 pints,*

The book makes exciting reading

"A Death in the Family" is an
older book. It was published in
1955 after the death of the author.
It contains chapters in italics
which the editors inserted In the
book, not knowing just where Mr.
Agee wished them to be but which
they felt added immeasurably to
the artistry of the writing, This
story is a search far reality too
but in the minds and hearts of
family namely that of one, Jay
Fallett, his wife, Mary, and their
two children Rufus and Catherine.
The plot can be outlined in one
sentence. Jay is called to his
father's home by illness; there is
an accident on the return journey
and Jay dies instantly. Through
this one event however a whole fam-
ily, five generations of it come to
life.It takes place in Knoxville. Ten-
nessee In 1915 and the scenes and
smells and sounds of the city and
countryside are drawn with a
master's touch, The struggle of
the children for understanding and
growth and their partial success is
skilfully developed. The love and
piety of the mother glows stead-
fastly from the first page to the,
last, There is tittle action but yet
there is much life; life as it really
is among members of a family
bound closely by ties of kinship.
The book breathes tenderness, un-
derstanding, peace and simplicity,
and pages where the words flow
along Biblical in their rhythm and
quality. I found it a deeply satis-
fying book to read.
