A stretched sweater is ono that's stretched to shape and size while it's being knit. This method may make a small piece of material go a long way but when the sweater is washed, it's apt to go hack to the original, pre-stretched size. To spot these, pull a small portion of the knit between your fingers. If it doesn't stretch very much (as a good quality does), or if the knit looks thin and loose, the chances are it has been stretched to size. LEFT-OVER POTATOES ARE A TREAT When you have left-over pota- toes, chill them in the refrigerator. Form small patties, roll in season- ed flour. Fry . in a skillet until delicately browned. On Saturday members of the family gathered nt their Wane to celebrate. Mr. and Mrs. King maintain their own home. He is 94, and Mrs. King is 84. HERE'S HEALTH One of the many things we're learning about the Russian people these days is that they love po- tatoes. "Kartoshka" is their word for this, the world's most important vegetable. They eat potatoes by the billions, smothered with sour cream; sprinkled with dill; teamed with herring, with mushrooms., with cucumbers. A sizable part of the Russian potato crop is made. into vodka and those who've traveled in the U.S.S.R. say that the Russians love French Fries. -An appetite for potatoeS is some- thing the Russians share with al- most all peoples or the earth ex- cept possibly the Orientals. In the past, Russia, in common with many other countries of Europe, has known severe food shortages and, when available, the potato has proved the bulwark against scurvy and malnutrition. Potatoes come being near a com- plete food, A nice mealy potato has just about everything, except fat. Human adults have been able to remain in good health after several months of eating nothing more than potatoes and a little extra fat. Potato Pancakes (Lailony) 4, medium -(Vi Its.) raw potatoes, grated 11 cup flour 1 egg slightly beaten 1 teaspoon salt teaspoon salt 1/2 teaspoon ground black pepper 1. tablespoon grated onion Sour cream Combine all ingredients except sour cream. Drop by serving spoons into skillet, Brown on both sides, In hot shortening, butter or margarine. Serve at once with sour cream. NOTE: To make a round pan- cake fold a 2x8-inch strip of aluminum foil into half to make double thickness. Form into a circle, place in skillet. Drop the pancake mixture into the foil circle to form it perfectly round. and let foil stay until ready to turn pancake. yrE,T,D 11/2 dozen. New Potatoes In Sour Cream 12 small (2 lbs,) new potatoes ' 1/2 -inch boiling water 11/2 teaspoons salt 2 tablespoons butter or margarine 1 cup sour cream 1/16 teaspoon ground black pep- per Wash and scrape potatoes. Place in a saucepan with boiling water and salt. Cover and cook 15 minutes or until potatoes are ten- der. Drain if necessary. Add butter or margarine, Heat until melted. Add sour cream and black pepper.' Heat, only until hot. Do not boil. YIELD: 4 to I) servings. DUIVRING CUTLET OR RISSOLES (Ootletki Eze Seliodki) 5 salt herrings.:. 10 cups cold water 1 t cup finely chopped fresh onion 1 tablespoon butter or Margarine 2 cups mashed potatoes 1. egg 2 tablespoons sour cream teaspoon Salt teaspoon ground dill teaspoon ground black pepper' cup fine, dry bread crumbs Soak herring in cold water over- night or 32 hours, Drain. Remove bones and chop very fine. Saute onion in butter or margarine. and add to fish along with potatoes, egg, sour cream, salt, dill and black pepper. Mix well and shape into cutlets or cakes. Roll in bread crumbs. Fry in hot shorten- ing turning to brown both, sides. YIELD: -6 to 8 servings. KIDNEY WITH POTATOES (Poltgilcis Karlofelen) 1 pound beef, veal, or lamb kid- neys 1. teaspoon salt 1 cup cold water 3 tablespoons flour 3 tablespoons better or margarine cup chopperd fresh onion 12 small boiled, potatoes 1 cup sliced encumbers 1/2 teaspoon salt xt teaspoon ground black pepper Fresh parsley Split kidneys and remove central fat and white tubes. Soalt with the 1 teaspoon salt and cold water 30 minutes. Drain off water. Cut into slices 1i-inch thick. Sprinkle with flour.
