Mr. Day says each variety of cheese has its own unique flavour
depending on the factory it is made in.
The different taste in cheese is because of aging and curing.
The longer it is aged, the stronger it tastes. Some types of cheese
like butter cheese cannot age too long because the moisture
content is too high.
Most cheeses age one or two months, except the cheddars.
The mild cheddar ages three months, the medium six months,
and the old one year. The best flavour for cheddar cheese comes
from aging slowly at a fairly cool temperature.
With some cheeses, such as butter cheese, fat is added to it.
And in others, fat is removed. The amount of fat in cheese
