Discovering
the joys
of lamb

How about September as a month to have a
discussion about Lamb? In this country
we see very little domestic lamb and a little
imported frozen lamb. Last fall in England we
were interested in the amount of Iamb and
mutton for sale in shops there. Beef was not
in great supply however.
Friends vow that they would never eat
Iamb. "Dislike the taste';, they say. When
served crispy, 'brown roast leg of Iamb with
real mint sauce, roasted potatoes and fresh'
green peas, the comment is always, "My I
didn't know it tasted like that." Our lamb is
invariably frozen New Zealand lamb and is
not as good as fresh spring or hot house lamb
but is good economical meat.
Lamb is defined as the flesh of young
sheep up to about 15 months old. Beyond that
it may be referred to as yearling. Lamb has
pinkish flesh that darkens with age. The fat
too is pinkish and becomes white and brittle
as the animal grows older.
A word about cuts to look for may be in
order. Chops and the leg seem to be most
popular from observation in supermarkets.
This may be misleading since one sees few
people at the Iamb section of the meat
freezer. Leg of Iamb may be full or half. The
full leg is almost the equivalent of the hind
quarter of beef, while the half is less the rump
end. The rump half may be referred to as
short leg. For many, the half is best since it is
easy to carve and elminates the high
proportion of bone in the rump end. A
butcher will bone and roll the leg, but half the
fun of carving is eliminated and some of the
flavour goes too.
The loin, containing the tenderloin usually
appears as chops (about 12) but makes a great
roast. The ribs appear as chops but also
become the crown roast with time and
patience. The shoulder is a good buy if you
can get neck and shank with it. Remove neck
and shank for the square cut shoulder roast
and use the neck and shank for stew.
Loin chops are like T-bone or Porterhouse
steaks and may be served in many ways.
English chops are good if you can get the
lamb kidney to prepare them. Split a double
chop which has been boned. Roll a prepared
