Village Squire, 1976-04, Page 4"THE CHEESE HOUSE" suggests a Sharp Cheddar Souffle Ingredients: 3 tablespoons butter 3 tablespoons flour 1/2 teaspoon salt 1 cup milk 4 eggs separated pinch white pepper drop of tabasco 1 cup grated sharp cheddar Melt butter and add flour and salt; cook until flour is golden. Add milk, stir and cook until the sauce is thickened. Remove from heat. Beat egg yolks well, and add several tablespoons of the sauce beating it into the eggs, then stir eggs into the remaining sauce. Return to low heat, stir in cheese, pepper and tabasco, stir until the cheese is melted, and remove from heat and cool. Beat egg whites 'ID peaks form then fold into cooled sauce. Bake in ungreased baking dish. Bake at 400°F. for 30 minutes or until the top is golden brown and the centre is firm. Make your selection of cheese, and cooked meats at the Cheese House.
