things have changed since then. The old plant
is dwarfed by the addition that was built in
1959. The new equipment makes Millbank
one of the most modern cheese plants in
Canada. There are two shifts at the plant, one
starting at 4 a.m.
In the old days, most cheese was made in
40 -pound round blocks but now nearly all is
made in larger rectangular blocks and cut into
more manageable smaller blocks. The reason
is to prevent waste. The old blocks had to
have a wax covering on all sides which meant
a good deal of cheese was wasted in cutting
off the wax. Today the convenient 40 -pound
retangular blocks that are shipped out of the
plant can be shrink-wrapped in plastic which
is convenient and efficient.
Some round cheese is still made for
customers who will accept nothing else, but it
makes a tiny portion of the total output of the
plant.
Unlike most of the area cheese factories,
Millbank sells most of its cheese to other
wholesal6rs who look after the aging and
selling of the cheese. Only a small portion of
the production is stored for aging at the plant.
