they actually improve the texture of the
cheese.
Next it's into the wooden slab boxes and
under the hydraulic -powered presses where
the moisture is squeezed out of the cheese.
After they are taken from the presses a
special spring-loaded end board is put in the
box to continue the pressing process as the
cheese ages in the store rooms.
Ken Krotz is a relative baby when it tomes
to cheese making as compared to his father
Wesley who still works around the plant after
more than 60 years in the cheese business.
He started in 1912 at the Molesworth plant on
Highway 86 and came to Millbank in 1928.
The Millbank plant was originally an old
foundary but was closed for many years until
in 1908 some local farmers felt the need of a
