It happened one night at Moon's Lake Lodge, a ritzy resort
in Saratoga Springs, New York. An Adirondack Indian
chief—and chefGeorge Crum was the fust to "chip" a
potato. Harangued by an obstreperous diner who kept
sending his potatoes back, demanding that they be sliced
thinner, Crum took his knife and cut some potatoes into
paper -thin slices; then he deep-fried them and served them
to the irritating hotel guestbe belie ' he would spite the

the "chips" and by the next day, everyone was demanding
wafer-thin potato chips. "Saratoga chips" remained an
elegant delicacy until 1925 when the first plant devoted
