Riddell was also a trustee on the
Huron Board of Education, past -
president of the Exeter District Co-
operative, plus, he has held several
other positions in the community.
He was first elected the Huron -
Middlesex member of the Ontario
Legislature in a bi-election in
March 1973, and his agricultural
knowledge soon served him well as
he was later named Liberal
agriculture critic.
Riddell's strong voice often
allows him to disregard the
microphone when he speaks at
special events in his own riding
especially if his integrity or com-
mitment to agriculture have been
publicly questioned. He apologizes
for his emotional response, re-
states his position, and resumes his
remarks.
Jack Riddell still owns and helps
operate a 200 -acre farm in Hay
Township in Huron County. To-
day, Riddell allows us to see
another side of his personality as
he enters the kitchen to make his
favourite recipe, chicken wings.
He not only defends Ontario
agriculture, he enjoys tasting its
rewards.
Chicken Wings a la Jack
''A cup (50 ml) vegetable oil
24 chicken wings (small or
drumstricks)
3/4 tsp (4 ml) salt
'/a tsp (1 ml) pepper
1 clove garlic, minced
Sauce:
'/z cup (125 ml) brown sugar
1 tbsp (15 ml) cornstarch
'h cup (125 ml) cider vinegar
1/2 cup (125 ml) chicken stock
1/4 cup (50 ml) ketchup
2 tbsp (25 ml) soy sauce
Into 13 x 9 inch (3.5L) baking
dish, pour oil; arrange chicken
wings in pan. Sprinkle with salt,
pepper, and garlic; turn pieces to
coat each with oil. Broil about 6 in-
ches (15 cm) from heat until lightly
browned, turning once or twice.
Sauce: Combine all ingredients
and pour over chicken. Bake, un-
covered, in 400°F (200°C) oven for
about 40 minutes or until tender,
basting occasionally to glaze
chicken as sauce thickens. Makes 8
