Despite Christmas sales in Oc-
tober and Santa Claus parades in
November, the holiday season still
seems to sneak up on us. The week
before Christmas is usually a time
of last minute shopping and holiday
preparations. According to the
Inspection Division at the Bruce -
Grey -Owen Sound Health Unit, too
much rushing around can have
serious health consequences. Food
poisoning cases during the holiday
season can ruin the festive spirit.
Fortunately, most of the cases are
completely preventable.
Is your turkey defrosted on the
counter, prestuffed, slow -baked or
partially cooked? If it is, you may
be jeopardizing your dinner and
•your health. Follow these safe food
handling tips to ensure a Merry
Christmas:
❑ Its . okay to prestuff Christmas
stockings, but not Christmas birds!
Stuffing the turkey the night"before
keeps the stuffing warm and lets
bacteria grow. Either cook the
turkey and stuffing separately, or
stuff the turkey just before cooking.
Use a meat thermometer to make
sure the stuffing reaches 74.0 (165
F) or hotter.
❑ Holiday meals usually mean a lot
of different things, types of food to
prepare --turkey to cook, potatoes to
mash, pies to bake, and so on.
Avoid cross -contamination by
keeping utensils, cutting boards and
hands clean with hot soapy water.
When washing cutting boards and'
other raw meat preparation surfaces,
apply a small amount of bleach and
allow a few minutes contact before
rinsing and drying.
0 Cook the turkey at 160 C (325 F)
until the meat is tender, the juices
run clear, and the meat throughout
is no longer pink. Never "slow
cook" your turkey at low
temperatures. "Slow cooking below
325 F is unsafe because low
temperatures leave the bird in the
danger zone too long. This means
bacteria can grow and produce
dangerous toxins" explains Tena
Van't Foort, the nutritionist at the
Health Unit.

microwave cookbook for cooking
and standing times. Use your
microwave temperature probe or a
meat thermometer to make sure the
internal breast and thigh
temperature is at 85 C (185 F).

make a proposal for some time, but
they don't know . who to make the
proposal to.
McKenzie said he was told that
the new DHC, . ith 10 members
from each county, would make the
decision on where the office would
go. Other reports indicate that the
Minister of Health would decide.
A special selection subcommittee
of the two DHC steering commit-
tees is currently in the process of
choosing candidates, with nothing
expected to be finalized until mid-
January.
"We're definitely interested," he
said. •
Mitchell Mayor . Hugh
McCaughey, reiterating what Van
Bakel and McKenzie said,
explained that the four heads of the
neighboring municipalities of
Mitchell, Hibbert, Logan and Ful-
larton townships met and decided
the best approach would be to offer
a joint submission to the DHC.
Mayor McCaughey said a letter
has already been sent to Perth
Steering Committee Chairman Jeff
Wilbee citing the advantages of the
Mitchell area. Once the members
have been selected for the DHC, a
verbal presentation is also planned,
he said.
At least two developers have
shown an interest in the DHC,
Mayor McCaughey added.
A district health council is a local
health planning board made up of
concerned citizens who volunteer
their time and expertise. With the
assistance of a small professional
staff, they plan health care service
for their communities.
Perth and Huron were the last two
counties-inthe province to become
part of the DHC system, when
Perth agreed to join Huron in Oc-
tober..
