using beets
and green tomatoes!
Green Tomato
Mincemeat
6 cups of green tomatoes cut up
6 cups of apples, cut up
1/2 cup of suet, ground up
2 lb. seedless raisins
1 tbsp. grated lemon rind
1 tbsp. orange rind
3 cups light brown sugar
1/2 cup vinegar
1/4 cup lemon in 1/4 cup of water
1/2 tsp. ground cinnamon
1/4 tsp. mixed allspice and cloves
Put the green tomatoes, apples,
suet and raisins through a meat
grinder. Then combine these with all
the other ingredients and bring them
to a boil in a large enamel or stainless
steel pot. Reduce the heat and simmer
for 2 or 3 hrs, stirring frequently to
prevent scorching. Pour into hot
sterilized, pint jars, allowing 1 -inch
headroom and process for 25 minutes
at 10 lbs. pressure, if you want to
preserve the mincemeat. Yields ap-
prox. 3 to 4 pints.
Beet Grape Jell
6 cups beet juice
2 boxes certo crystals
2 (3 oz.) pkgs grape jello
7 cups white sugar
2 tbsps. lemon juice
Heat beet juice to boiling point,
add certo & bring to a boil. Add
grape jello & bring to a boil again.
Add sugar & lemon juice. Boil 2 min.
Pour quickly into jars & seal while
hot.

Green Raspberry Tomato Jam
10 green tomatoes (approx.) to yield
5 cups of crushed tomatoes
5 cups white sugar
1 (607.) pkg. raspberry jello
2 tablespoons lemon juice
Wash, core & crush green
tomatoes. Do not peel. Place in Targe
pan to permit expansion while cook-
ing. Add sugar & boil 10 minutes.
Skim off foam. Add rasp. jello,
lemon juice & boil 10 minutes more.
Tim & bottle Seal at once. co'er,
while hot with 1/8" melted paraf-
fin. r
