Mighty
Sandwich
RURAL LIVING
You can put just about anything between two slices of bread! The Bakery
Council of Canada shares with you some of their innovative ideas for sand-
wiches.
Meat fillings
Crisp bacon, mashed or sliced banana
with fresh lemon juice, plain or curry
mayonnaise on whole wheat or white.
Chopped canned corned beef or
tongue, sour -pickle relish, mayon-
naise on rye or pumpernickel.
Minced cooked steak and prepared
mustard on toasted sandwich rolls.
Minced beef cooked with chopped
celery and onion, mixed with a little
horseradish, salad dressing on crack-
ed wheat or hamburg buns.
Minced cooked chicken or turkey,
almonds, mayonnaise on Italian or
white.
Minced cooked ham or luncheon
meat, cheese, sweet pickle, mayon-
naise on hot dog rolls or whole wheat.
Minced cooked lamb, chopped fresh
mint, minced onion, mayonnaise, salt
pepper on white or light rye.
Liverwurst, sliced tomato, lettuce,
mayonnaise on French or dark rye.
Sliced meat loaf, tomato and cheese,
spread with prepared mustard on
crusty rolls or cracked wheat.
Cold slices of roast pork or other
meat with a spicy sauce on toasted
sandwich rolls.
Egg fillings
Chopped hard -cooked egg, chopped
ham, minced onion and green pepper,
salad dressing on French or whole
wheat.
Chopped hard -cooked egg and water-
cress with mayonnaise and a few
drops of fresh lemon juice on white
or rye.
Cheese fillings
Canadian Cheddar cheese slices, fried
ham, prepared mustard on white or
rye.
Cottage cheese with chopped dill
pickle, stuffed olives, nuts and salad
dressing on hog dog roll or cracked
wheat.
Cottage cheese, pickled beets on
white or Italian.
Cream cheese, prepared horseradish,
onion, finely shredded dried beef, a
little cream on dark rye or hamburg
roll.
Swiss cheese and mustard on rye
bread with lettuce or pumpernickel.
Peanut butter fillings
Combine peanut butter with:
Mashed baked beans, chopped dill
pickle, mayonnaise, salt and pepper
on rye.
Chopped dates and fresh orange juice
to moisten on raisin.
Deviled ham, chopped sweet pickle.
mayonnaise on white.
Sandwiches that travel
Quebec Club
Toast and butter large oval slices of
French bread. On bottom slice, put
baked or broiled ham and Swiss
cheese slices. Add second slice of
toast and top with lettuce, tomato
slices and crisp bacon. Add mayon-
naise if desired. Add third slice of
toast and top with sliced cooked
chicken and lettuce. Add fourth slice
of toast.
Prairie Combination
Sliced hard -cooked egg, sliced Six chopped hard -cooked eggs. 1/2
tomato, mayonnaise on cracked cup mayonnaise. 1 teaspoon curr%
wheat or hamburg roll. powder, 1/2 cnn chopped stuffed

olives, 1/2 teaspoon salt, 1/4 teaspoon
pepper, 8 slices buttered Enriched
white bread.
Western Rodeo Rolls
Two cups finely -diced cooked ham, 2
cups finely -shredded cabbage, 1/2 cup
diced celery, 1/2 minced green pepper,
1 chopped hard -cooked egg, 2 tables-
poons prepared mustard, a dash of
onion salt, mix with salad dressing
and stuff 10 hot dog rolls; garnish
with sweet pickle slices.
Maritime Special
Two cans sardines, 12 slices buttered
rye bread, 6 slices Swiss cheese, 6
tomato slices, Arrange sardines on
bread. Top with cheese and tomato
slices, and cover with remaining
bread. Makes 6 sandwiches.
Sandwiches to build
Ontario Special
Buttered pumpernickel bread with
corned beef with mustard; white
bread shredded cabbage and green
pepper with salad dressing: buttered
rye bread with cheese.
Fraser River Surprise
Buttered whole wheat bread with ham
and chicken slices; whole wheat bread
spread with mayonnaise with hard -
cooked egg and cucumber slices; but-
tered white bread with shredded let-
tuce and salmon salad; raisin bread
with cream cheese, seasoned with
curry powder and chopped cashews.
Atlantic Delight
Buttered white bread with salmon or
tuna -and -celery salad; rye bread
spread with mayonnaise, cream
cheese and olives; white bread with
sandwich spread and crabmeat mixed
with fresh lemon juice and green
onion.
West Coast Extra.aganza
Buttered brown bread with cream
cheese -pineapple spread; white bread
spread with mayonnaise and peanut
putter and bacon strips; buttered
brown bread with shredded ca, , of
'kith mavonnake.
