The Rural Voice, 1982-09, Page 41SPICED PRUNES 1 cup dried prunes (about 24) '/e cup water 2 tablespoons sugar '/ teaspoon cinnamon '/a teaspoon cloves '/ teaspoon dry mustard 1 teaspoon vinegar 1 teaspoon finely grated lemon rind 1. Place prunes in 1 -quart casserole. 2. Combine remaining ingredients and cook until sugar and spices are dissolved; pour over prunes in cas- serole, cover. 3. Bake in oven (350°) for 1 hour. Bottle. Serve as a garnish with salads and meats. Serves 6. (courtesy Canadian Cookbook) PICKLED WATERMELON RIND 1 medium watermelon 5 pounds sugar 5 cups white vinegar 5 cups water 4 tablespoons stick cinnamon 3 tablespoons whole cloves 3 tablespoons whole allspice 2 tablespoons whole ginger 2 lemons thinly sliced 1. Remove almost all the pink from the rind; cut rind in strips, 1 inch squares or small rounds; remove the green skin. 2. Soak overnight in ice water to which salt has been added (4 tablespoons to 1 quart) or soak overnight in lime - water made by dissolving 21/2 table- spoons slaked lime in 3 quarts of cold water, to crisp the rind. 3. Drain; cover with fresh water; cook until tender, but not soft—about 30 minutes. 4. Make a syrup of sugar, vinegar and water by boiling 5 minutes. Tie spices in cheesecloth and simmer in syrup. 5. Add the fruit; simmer until trans- parent when a piece is lifted from the syrup; let stand overnight; in the morning drain off the syrup, bring to boil and pour over fruit; repeat. 6. Place in sterile jars; cover with syrup; place a slice of lemon in each jar. 1 cup red maraschino cherries may be added during the last cooking. This gives the rind a delicate rose colour. 1 teaspoon of oil of cloves and I teaspoon oil of cinnamon may be used instead of spices.
