Cool as a summer breeze

On the off chance that you've got a little
time to sit back and enjoy a cool drink this
August, Rural Voice has gathered a
selection of cool as a summertime breeze
drinks.
Most use fresh fruit (let's enjoy it while
it's plentiful); none are alcoholic (you can
add liquor if you want); ar 1 all are
delicious.
Feel free to improvise and substitute
whatever fresh fruit you prefer.
The cranberry coolers are from a highly
recommended cookbook "The Cranberry
Connection" by Beatrice Ross Buszek and
available from her at Cranberrie Cottage,
RR#1, Granville Ferry, Nova Scotia. And
the blueberry drinks come from "The
Blueberry Connection" a delightful,
handlettered cookbook by the same
author, available at the same address.
FROZEN FRUIT PUNCH
5 bananas
2 cups cold blueberries,
1 6 oz. can frozen pineapple juice
4 c. water
1 c. sugar
2 lemons
2 bottles soda water
Boil sugar and water for about 3
minutes. Cool. Blend bananas. Add sugar
mixture, blueberry and pineapple juice, 4
juice cans water and juice of two lemons.
Pour into freezer container and freeze.
About 30 mins. before serving, put frozen
fruit block in punch bowl. Cover with soda
water. Stir and break up. Float fresh
blueberries on top. Makes about 15
generous servings. A 16 -oz package of
frozen blueberries equals 3-'/2 cups.
SPICY ICED TEA
21/2 c. boiling water
3/4 cup sugar
5 tea bags or 5 teaspoons loose tea
1/4 teaspoon each ground nutmeg &
cinnamon
2 cups cranberry juice cocktail
11/2 cups water
'/2 c. each orange and lemon juice
Pour boiling water over tea and spices.
Steep 5 minutes. Remove tea and strain.
Add sugar and stir until dissolved
Cool. Add remaining ingredients. .Chill.
Serve over ice cubes in pitcher (7 cups)
SAUCY BERRY PUNCH
1'/2 c. sliced rhubarb
1 c. chopped cranberries

1 c. sugar
2/3 c. water
11/4 c. pineapple juice
2/3 c. lemon juice
Pink food colouring
Cherries, plums or apricot halves in ice
cubes
1 large bottle dry gingerale
Place fruit, water and sugar in pan and
cook until tender. Strain. Add pineapple
and lemon juice. (Tint if needed). Chill
well. Before serving pour over fruited ice
cubes. Add gingerale.
CRANBERRY -ORANGE QUENCHER
Combine 1 32 oz. bottle cranberry cocktail
with 1 cup orange juice and 1 teaspoon
mace. Place an orange peel twist in each
section of ice cube tray. Half fill each
section with juice mixture. Freeze. Re-
frigerate restof mixture. One half hour
before serving: Remove tray from freezer.
Thaw slightly. Put 2 or 3 cubes in each of 6
old-fashioned glasses. Pour refrigerated
juice over ice cubes. Mixture will become
slushy. Serve with teaspoons. Makes 6 (8
oz.) servings.
CITRUS SHRUB
In a small stainless steel or enameled
saucepan combine '/2 cup grapefruit juice
and 1/4 cup each of orange juice, lemon
juice, and sugar, bring the liquid to a boil
over moderate heat, stirring and washing
down any sugar crystals cling'-ig to the
sides of the pan with a brush dipped in
cold water until the sugar is dissolve, and
simmer the syrup, undisturbed, for 1
minute. Remove the pan from the heat and
let the syrup cool. Stir in 2 teaspoons white
vinegar, pour the mixture into a tall glass
filled with ice cubes, and add 1/4 cup
chilled club soda or to taste Garnish the
drink with a slice of orange. Makes 1
drink.
BANANA SMOOTHIE
In a blender or in a food processor fitted
with the steel blade blend 1 banana,
sliced, '/: cup each of plain yogurt and
orange juice, and 3 tablespoons honey at
high speed until the mixture is smooth.
Pour the mixture into a chilled tall glass
and sprinkle it with freshly grated
nutmeg. Makes 1 drink.
