3/4 C of warm water; stir well. Let cool to
lukewarm. In the remaining 1/4 C water
dissolve the yeast; add to other mixture.
Add flours gradually and knead into a
smooth ball. Place in buttered bowl and
brush top with soft butter. Let rise to
double its bulk. Knead lightly this time
and shape into loaf in pan. Again brush
with soft butter and let rise to twice its
bulk. Bake at 350• for 50 to 60 minutes.
Here's a special recipe from New
Brunswick that uses maple syrup, a
commodity that should be in good supply
by the time you read this April Rural
Voice.
MAPLE SYRUP GINGERBREAD
New Brunswick's spring, with its warm
days and frosty nights, provides the
perfect combination for the production of
a good run of maple sap. The sad thing
about maple syrup is that more people
don't use it in their cooking.
1 cup maple syrup •
1 cup commercial sour cream
1 egg, well beaten
2'/3 cups flour
13/4 tsp. baking soda
2 tsp. ground ginger
1/2 tsp. salt
4 tbsp. melted butter.
Combine syrup, cream and egg. Sift
dry ingredients together and stir into
liquid. Beat well. Add melted butter and
beat again. Pour into well -buttered 9x x2
inch baking dish and bake uncovered ip1 a
350°F. oven about 30 minutes. i
Last but not least is an heirloom recipe,
from a Nova Scotia cookbook called The
Blueberry Connection. by Beatrice Ross
Buszek. It's a lovely hand -lettered and
illustrated book. available from the
author at R.R. 1, Granville Ferry, Nova
Scotia. Whole grain it isn't but there's
plenty of good old white flour (use
unbleached if you can) and besides. these'
muffins taste fantastic.
IRENE'S BLUEBERRY MUFFINS
1 c . Blueberries
2 c. sugar
' e c. shortening
' : t. salt
2 c. milk
1'/: c. flour
2 eggs
2 T. baking powder
1/4 t. soda
grated lemon rind.
granulated sugar
Combine sugar and shortening. In
another bowl beat eggs and add milk. Sift
together the dry items - add to sugar
mixture, and then to egg mixture.
Fold in floured Blueberries. Pour into
greased muffin tins then sprinkle tops
with grated lemon rind and sugar.
Bake at 375° for about 30 minutes.
Makes 1 dozen muffins.
