seems to gravitate towards a dry wine."
The winemakers' wives each have
different roles in their husband's hobby.
"Ruby is a very crucial partner in the
wine," explained Gord. "She does the
sterilizing, cleaning and she helps with
the bottling."
Kathe Seeger isn't as physically involv-
ed. "I'm not in with the wine, except
maybe picking the berries," she said.
"But the wine making is his (Carl's)
department. I just tell whether I like it or
not."
A'FEW RULES
Prying the secrets to his wine -making
success from Carl is roughly akin to
breaking into the Royal Mint: it can be
done, but only with the greatest care.
Finally, though, he agrees to offer a few
general important rules to follow: 1) Keep
records, listing date made, type of wine
and other details of production. This is
important, said Carl, '`especially if you
want to make wine next year." 2) Keep
everything absolutely clean. This, he
noted was most important. If equipment
is not cleaned properly, the excited first-
time wine maker may discover he has a
bottle of vintage 1980 vinegar. Alright for
Frenchfries and salad maybe, but quite a
letdown. 3) The wine must be racked
(siphoned) to remove the clear liquid
from the sediment. 4) After the ferment-
ation has stopped, it is critical that no air
get into the containers, which should
always be kept full.
In judging their final products, each
wine maker gets his positive support froth
different sources. For Carl, it comes from
outside critics. His wine has been used at
the weddings of his son and daughter
and, as much an acclaim as one might
hope for, it vanished before other wines
were taken up.
For Gordon, constructive criticism
comes from within and is indeed remark-
ably objective. "It's just a hobby with
very enjoyable results. It isn't the best
wine I've ever had," he judged, "but
there is a sense of accomplishment in
making your own wine. It's not some-
thing you have to choke down. We find it
quite pleasant to drink."
Carl agrees with Gord on the rewards
of the hobby. "Making the wine is as
much a reward as a hobby as it is to have
the wine," Carl estimated. His wife
added another reason. "Around here
there is so much fruit that it is wasted,"
said Kathe. "What is better than a
natural drink, even if it is sweet cider for
kids?"
As bottles of wine are slowly becoming
regular items on many dining tables in
Canada, there are at least two places in
the area where the jugs have no fancy
labels. Just a hand-written identification
sticker. And they like it that way.
