[Dutch Chocolate Torte 1
8 sq. unsweetened chocolate (8 oz.)
'/2 cup hot water
1'/cups butter or margarine
1/2 cup granulated sugar
1/2 cup Tight-brown sugar
2 eggs
1 tsp. vanilla extract
2 cups sifted cake flour
'/2 tsp. salt
2 tsp. double-acting baking powder
'/2 cup milk
2 egg whites
Early on the day, or the day before:
1. In double boiler melt 3 sq. chocolate;
then add water and stir until smooth.
Cool slightly. Start heating oven to 350 F.
2. In large bowl, with electric mixer at
medium speed, beat '/2 cup butter with
granulated and brown sugars until cre-
amy. Beat in eggs, one at a time, then
vanilla and melted chocolate.
3. Sift flour with salt and baking powder.
Add alternately with milk to chocolate
mixture beating until well blended. Pour
into 2 greased 8" layer cake pans. Bake
about 20 min., or until cake springs back
from sides of pan. Cool 5 to 10 min.,
turn out on rack to cool completely..
Two to three hours before serving:
1. Make up this Chocolate Frosting: In
double boiler melt 4 sq. chocolate; set
aside to cool.
2. Meanwhile beat egg whites until stiff,
but not dry. Gradually beat in 11/2 cups
confectioners' sugar, beating until thick.
3. In another bowl beat 1 cup butter until
creamy. Slowly beat in egg-white mix-
ture, then melted chocolate, beating until
throughly blended.
4. Use this frosting to fill and frost the 2
layers. With vegetable parer and 1 sq.
unsweetened chocolate make chocolate
curls; use to sprin kle on top of cake.
Also, if desired, lay a paper doily on top
of cake (or cut one out with scissors), then
over doily sprinkle some confectioners'
sugar; carefully remove doily, leaving its
pattern.
5. Refrigerate cake to allow frosting to
firm up. Serve. cut into 12 to 16 wedges.
ADVOKAAT
[An Eggnog type drink]
9 eggs
1 c. white sugar
1'/2 tsp. vanilla
1'/2 c. 35% grain alcohol
Mix well. Cook on top of a double
boiler, stirring constantly until thick. Set
pan in cold water and lift up and down
until cool. Strain and chill.
A little whipped cream on top makes
this a nice drink when you have company.
