From a culinary standpoint the aim of the staff is to provide a good, home -cooked meal the way grandmother might if she was having a big family get-together. The restaurant runs a smorgasbord at all times with a salad bar stocked with all kinds of made-up salads and the main course provided for with turkey. chicken, roast beef or pork. What many people don't realize, Sandra says. is that you can get a meal at pretty well any time of the day at the White Carnation though at some times it may only be a cold plate. The big times of course are lunch and dinner. This year, offering lunches for the first time, the White Carnation did a pleasing amount of noon -hour business Sandra says. It's a favourite place for women's groups to have lunches. Some advertising also brought a surprising amount of drop-in business during the summer season, she says. But of course the main part of the business still is the ongoing banquet and reception business in the evenings. The new licencing arrangements make if possible however to have both special parties and the general public at the same time with provisions made to close off the portion of the building to give a little privacy to the private parties. Despite her initial hesitancy to get involved Sandra now enjoys the business though the long hours are one draw back she says. Under the old set up the restaurant was only open when there was business. Under the new licensing regulations it must maintain regular hours even if there is no business. There is usually someone at the restaurant from about 9:30 in the morning to get ready for the noon meal until 8 or 8:30 at night or much later if there is to be a banquet or party. But she says, the job is never boring and she's learned a few things such as the fact that "if anything stupid can happen, it will." Her experiences, many of them humourous, in running the business will likely find their way into print someday if ever she can find the time. One of her interests that has suffered since she went into business is her writing. She has a delightful way of dealing with humourous situations and several of her short stories appeared in Village Squire in the past. But for now she's more interested in providing food for the stomach than food for thought. It used to be you were a freak if you were fit.
