reuse of an old building for a new purpose. Today it's a popular
restaurant and nightspot. Once it was a creamery and cheese
factory.

The time since then has been spent slowly changing the aim of
the business. At first there were the painful problems of getting
to know the business from the ground up. The old staff all left
with the ownership change and the Orrs had to start from scratch
to build a new one. In the early days it meant that without an
experienced confident staff, Sandra had to get involved in doing
nearly everything herself. Today they've slowly built up a staff of
more than a dozen experienced part time persons who can,
Sandra says, pretty well run the place without her, leaving her
time to worry about the business side of the operation.
There were other problems as well. Improvements had to be
made to satisfy health and safety officials. And there was the
switch from operating on a special occasion basis to a fully
