Dough part:
2 cups flour
' cup milk
2 level tbsp. lard
1'/2 tsp. baking powder
Salt to taste
Put into baking dish 1 tsp. butter. Melt
and mix with 3 tbsp. flour. Cook until
creamy. Add 1 quart chicken broth, and 1
cup cooked chicken, (cut into small pieces)
1 cup cooked potatoes, cut fine, 1 cup
cooked celery, 11/2 cup carrots and 3 hard
boiled eggs. Cover top with dough. Bake in
moderate oven.

Shoo -Fly Pie
Pastry for a one -crust, 9 inch pie
Bottom part:
'/2 cup molasses
1 teaspoon soda
1 cup boiling water
Pinch salt
Top part:
11/2 cups flour
1 cup brown sugar
3/4 cup butter or lard
'/: teaspoon cinnamon
Dissolve the soda in the molasses and stir
until it foams; add the boiling water. Mix
the flour, cinnamon, sugar and butter into
crumbs. Pour one-third of the liquid into
the unbaked crust; sprinkle one-third of the
crumbs over the liquid and continue
alternating layers, putting the crumbs on
top. Bake in a 375 -degree oven for about
half an hour until the crumbs and crust are
golden.
Schnitz Pie
Pastry for one -crust, 9 -inch pie
5 or 7 apples—depending
on the size needed to fill the pie plate
1 cup brown sugar
3 tablespoons soft butter
3 tablespoons flour
A sprinkle of cinnamon
Dabs of sour cream
Dabs of butter
Peel and core the apples; cut them in
segments about 1 inch thick on the round,
outer side. Arrange the apples tightly -
touching but not overlapping—the rounded
side up like scallops around the edge of the
pastry in the pie plate and throughout the
bottom in a pattern of rounds. Blend the
butter and sugar, then the flour and spread
the resulting crumbs over the apples,
being sure the apples on the outer edge get
some of the mixture too. Dab cream over
the crumbs, here and there, also the
butter, and sprinkle the cinnamon over all.
Bake for 15 minutes at 400 degress, then at
350 degrees for about half an hour.
