pan and cover with water. Place
over high heat, and when boiling,
lower the heat and simmer for
five minutes. Spread the leaves
on double paper towels to dry and
cool to room temperature. When
cool, shred the leaves into
bite -sized pieces and re-
frigerate. Leave the garlic in the
oil for about one hour, then
remove it.
Just before serving, heat the
oil, vinegar, salt and pepper in a
small stainless steel saucepan,
stirring occasionally. Toss the hot
dressing with the chilled marsh
marigold leaves until they are
well coated. Sprinkle the chopped
eggs and crumbled bacon over
the salad and toss again lightly.

the most dangerous -poison hem-
lock, water parsnip and water
hemlock. The simplest way to
avoid ever picking these plants is
to memorize their distinctive leaf
structure. in which the veins run
to the notches of the dentate
leaflets.
Aside from these three deadly
plants, foragers should avoid the
buttercup, lily of the valley,
jimson weed. tansy ragwort.
which has already been men-
tioned. and vetch plants.
