marinate: chill. Place lettuce leaf on each
slice of bread: spoon on chilled zucchini
mixture. Top with egg slices, sprinkle with
paprika. Garnish with sliced tomatoes,
cucumber fingers and carrot curls. Yields
12 open -face sandwiches.
HOME PICKLED EGGS
3 cups white vinegar
11/2 cups water
11/2 teaspoons salt
1 teaspoon mustard seed
1 teaspoon black peppercorns
2 tablespoons sliced ginger root OR '/2
teaspoon celery seed
12 hard -cooked eggs
Combine all ingredients except eggs in a
saucepan. Bring to a boil, then reduce heat
and simmer uncovered for 10 minutes.
Strain to remove spices and let solution
cool. Pack eggs in sealable containers.
Pour solution over eggs to cover. Let stand
at least two days before using.
One of the following may be substituted
for mustard seed: 2-3 bay leaves, 2 cloves
garlic, or 1 teaspoon whole cloves. If
desired sugar, to taste, may be added.
EASTER EGG FUN
HOW TO BLOW EGGS: Wash and dry
eggs. Pierce both ends of the egg with a
large needle. Slightly enlarge hole at the
small end of the egg. Push needle well into
egg, to break yolk. Hold egg over bowl with
small end down. Blow into hole at opposite
end. Rinse shell with cold water.
TO COLOUR EGGS: Try felt pens; nail
polish; food colouring; fabric dyes; ink;
acrylic, enamel or poster paints. NOTE: If
planning to eat hard -cooked eggs that have
been dyed, make sure that a non-toxic
vegetables dye is used, as the shell is
porous.
DECOUPAGE EGGS: This is easy to dol
Cut tiny pictures from magazines or gift
wrap; use dried flowers, feathers, or
stickers. Glue decoration on egg (which
may be plain, dyed or painted). Let dry,
then coat with spray varnish or decoupage
coating (i.e. Modge Podge) NOTE:
Brushed -on varnish may discolour
pictures. If desired, instead of varnishing
on top of decoration, coat with white glue
and sprinkle with glitter. Glue will be clear
when dry.
EGG ANIMALS: OWL:
Colour egg with black or brown felt pen.
Glue on beak made of triangle of con-
struction paper. Use two small stones for
feet.
PIG: Dye egg pink. Glue on miniature
marshmallows for four legs and snout.
Make a curly tail from a pipe cleaner. Draw
eyes with a felt pen.
MOUSE: Glue on large pink ovals of
construction paper for ears. Add a pipe
cleaner tail; draw on whiskers and eyes
with a felt pen.
Invent your own: Rabbits with paper
ears and a cotton ball tail; Fish with tissues,
paper fins; Frogs, Striped Bumblebees,
and so on.
TIPS: After drawing designs with a felt tip
pen, let dry and coat with clear nail polish
to prevent smearing.
To make stands for decorated eggs, glue
on small plastic curtain rings, buttons,
spools, stones, pieces of wood or bottle
caps.
