the plants were soon big enough to cultivate; then they grew
even faster, and in ordinary season, it was possible to get the
third hoeing out of the way before they haying season arrives.
It was just as important then as it is now, to select the right
crop for the market.' `The farmer must not go on year after year
growing something which was in style 20 years ago, and paying
no regard for the present demands of customers."
If the farmer wishes to be successful, "He may believe that
Snowflake potatoes are superior to the Early Rose, but if the
customers don't want them it is not recommended to grow them.
But sometimes we must make exceptions to this rule," Farming
for Profit said. Never convert cider into brandy or his grain into
whiskey however profitable it would be, it Suggests.
But not all crops were profitable. The 1880 farmer who
complained that it cost him twice as much to grow the potatoes as
they brought on the market, could have been living today.
