The Rural Voice, 1979-01, Page 36BAKED BEANS 2 cups dry beans—she uses a combination of white beans, soya beans and large dutch beans Bring to boil, then let stand for at least 1 hour. Put beans and liquid into large casserole. Add: 1 can condensed tomato soup 2 tbsp. molasses 2 tbsp. brown sugar 1'/2 tsp. salt '/: tsp. dry mustard 1 small onion chopped Combine with beans. Cover and bake at 225 degrees for 6-8 hours. Add more liquid if necessary. if you have a ham bone cook it with the beans then remove and cut off meat and add to the beans. Otherwise top beans with small pieces of bacon. TUNA CASSEROLE 3 cups of noodles cooked and drained 1 can tuna, drained 'h cup mayonnaise 1 small onion chopped 1 cup frozen peas 1 tsp. salt 1 can celery or mushroom soup '/2 cup milk 2 tbsp. processed cheese spread ('h cup slivered almonds) optional Combine noodles, tuna, vegetables, mayonnaise and salt in a 11/2 quart casserole. Blend together soup, milk and cheese spread. Heat and stir till cheese melts. Add to noodle mixture; add almonds and combine. Top with crushed potato chips or bread crumbs. Bake at 400 degrees for about 30 minutes. HAMBURG CASSEROLE 2 cup macaroni—cooked and drained 1 lb. hamburg 1 med. onion chopped V. cup green pepper chopped 21/2 cup tomatoes or tomato juice 1 tsp. salt 1 tsp. cinnamon Brown hamburg, then add onion and green pepper. Add tomatoes and seasoning and heat. Place macaroni in large casserole. Add tomato mixture and combine. Top with '/2 cup of bread crumbs. Bake at 350 degrees for about 45 minutes. CHICKEN PIE 21/2 cups chicken broth 2 cups chopped chicken 1 sm. onion 1 cup sliced carrots 11/2 cups potatoes - cubed 1 cup frozen peas 2 tbsp. margarine ' cup flour 1 tsp. salt pepper to taste Biscuit dough for topping Heat chicken broth in a saucepan. Add carrots, potatoes and onions and cook covered about 10 minutes. Place chicken. onion and frozen peas in large casserole. Drain other vegetables saving broth. Add vegetables to casserole. Melt margarine in saucepan, then add flour and stir. Add broth and stir until thick. Add seasonings. Pour over chicken and vegetables in casserole. Bake covered at 425 degrees for about 15 min. Remove lid and place small round of biscuit dough on casserole. Return to oven for about 10 min. until biscuits are brown. Mrs. Borden Fenton of RR 3.
