Statistics Canada reports that average per capita beef consumption in 1977 was 108 pounds, less than the record 110 pounds per person eaten in 1976 but still well above beef consumption levels of 10 or 20 years ago. In 1967, Canadians ate an average of about 83 pound of )eef; in 1957 the figure was 72 pounds Or capita. Consumption of mutton and Iamb has been falling since 1970, a year when we each ate about five pounds. In 1976, consumption was 3.3 pounds per capita and in 1977 it fell to 1.8 pounds. Pork was a more popular meat last year than in 1976. The average Canadian ate 55.5 pounds in 1977. compared with 53.1 pounds the year before. However, pork consumption has been higher in the pao'. The record year was 1971 when per .,pita consumption reached 68.3 pounds. Poultry consumption has been increas- ing steadily in the last 30 years. In 1948, the average Canadian ate less than 15 pounds of fowl and chicken. In 1976, it was 34.7 pounds and last year it reached a record, 36.3 pounds. Turkey consumption has remained steady at about nine to 10 pounds per capita for the last 10 years. Egg consumption was off slightly in 1977--18.6 dozen per Canadian compared with 19.1 dozen in 1976. In 1971, consumption amounted to more than 21 dozen per person. Both butter and skim milk powder consumption declined last year. Canadians now eat about 10 pounds of butter per capita annually. Only five years ago, consumption was more than 15 pounds per person and until the late 1950s, it was more than 20 pounds. Average per capita instant skim milk powder use last year was 1.6 pounds, down from 1.9 pounds in 1976. Cheddar cheese consumption declined by about one-half pound per capita to an average of 7.2 pounds in 1977; however, to date in 1978 cheddar consumption has shown some improvement. Processed cheese consumption was about six pound per capita last year, unchanged from the year before. Meanwhile, specialty cheese consumption continues to increase, reach- ing 6.7 pounds percapita last year. Support program for corn announced The farm Income Stabilization Commis- sion of Ontario has announced a support price of $2.38 per bushel for corn sold in the crop year September 1, 1977, to August 31, 1978.
