Herb garden a
showpiece that adds
zest to your food
Herbs can add zest to summer eating
and be an unusual showpiece in your
garden. Visitors can see how versatile
herbs are at the first demonstration herb
plot at the Cambridge Research Station,
Cambridge, Ontario.
The research station, operated by the
Ontario Ministry of Agriculture and Food,
is located about 19 kilometres (12 miles)
southwest of Guelph. It is open to the
public weekdays from 8:30 a.m. until 4:00
p.m.
"Herbs are a useful addition to your
kitchen." says Professor Ambrose Zitnak.

featured at Cambridge are borage,
caraway, fennel, leeks. lemon balm and
anise."

which can be dipped in pancake batter and
fried. In Switzerland. a similar treat made
from sage leaves is called "mousetails",
because the leaf stalk sticks out of the
batter.
Besides adding'extra flavour to meals,
herbs are attractive in the garden. At
Cambridge, some herbs are planted in the
shape of a wagon wheel. Parsley or thyme,
planted around the rim, makes an
attractive edge. Sweet basil, sage, chives,
mint, tarragon, savory and sweet marjoram
can be placed sparingly between the
wheel's spokes.
Knot gardens, looking like knotted
ropes, are popular in displays of clipped
herbs such as lavender, mint, rue, thyme
and wormwood.
Annual herbs are usually sown in May,
but there is still time to sow perennials.
They can be placed in a seedling bed or
coldframe, thinned out and left until next
coring when they can be transplanted to
the main garden.
Biennials such as caraway and clary
need special care to establish roots the first
season. Caraway thrives if it is sown in
early autumn and harvested the following
v ear.
