Consumers often build up a loyalty to one brand of cheese over another claiming they can taste a real difference. The taste difference could be due to the little difference in each plant's way of doing things, Don says. It could be due to different cultures used in the process. A culture that works in one factory may not work in another because the buildings themselves seem to have personalities. But a lot of the taste difference, Don says, is with the consumer who gets used to one kind of cheese. Pine River is one of the few co-operative cheese factories left, thought its co-operative more in name than anything else. It used to buy milk from its own patrons but all that changed under the 0.M.M.B. Now the milk producers milk must be sold to the board, picked up by milk transports and then delivered to the factory. There's no telling where the milk may have come from. It forced a reorganization of the by-laws of the company since thee old rules no longer applied. Now dividends are paid according to milk shipments. Ironically, if the factory had continued under the old system, it would have no problems getting as much milk as needed. There aren't as many milk producers locally as there once were, but production of those left is much greater.
