LLBO approves Brussels licence At a hearing in Kitchener on October 8, the Liquor Licensing Board of Ontario (LLBO) approved the application for a liquor licence submitted by the new owners of the Brussels Hotel, clearing one more hurdleinthewayof opening the new facility, which has been closed for more than a year. The opening, under new owners Jerry White and June Warwick, is now planned for mid-November, barring “any new surprises," according to Mr. White. Originally planned for October 1, the opening has been delayed as the result of several of these ‘‘surprises’’ since the new owners took possession last April. Among them was the need to install two completely new furnaces in the building, as well as to tear out and replace, from the ground up, all the main floor washrooms, which have been restored to provide access to the handicapped, a feature few public buildings in the area now have. Major renovations throughout the entire main floor include new walls and ceilings in both dining rooms, in the large beverage room and in the smaller facility at the back of the hotel, as well as new wiring, plumbing and lighting throughoutthe entire building. Most of the furniture for the hotel has also been purchased, and is stored along the walls of several rooms awaiting their completion, while new windows and doors are currently being installed at the main entrance. Don Henry of Goderich has been hired to oversee the food and beverage end of the new operation. Mr. Henry is well known to patrons of fine dining establishments throughout the county, having been formerly employed in a managerial capacity at the Har­ bour Lights Yacht Restaurant in Bayfield and at both the Park House and Bedford Hotel in Goderich, prior to being lured away to work in Brussels. ‘‘Don is a real asset to us, and we are pretty lucky to get him,” Ms. Warwick said. She adds that the hotel will probably require 10-12 more full-time and part-time staff members once it is in operation, and says that interviews for the positions will likely be held two to three weeks prior to opening. Waiters, waitresses, cooks, house­ keeping and bar staff and dish­ washers will all be needed, she said. The present staff, including Mr. White’s 17-year-old son, Steve, now reside in apartments on the second floor of the hotel, which will likely be restored to provide further long-term rental accom­ modation, once the hotel operation is underway. A grand opening for the new facility, including live entertain­ ment, is planned, with the date to be announced as soon as it is finalized. Deciding it was time to slow down a bit, he returned to Brussels withhisfamilyin 1973,going to work for Jack McCutcheon at the original location of McCutcheon Motors. In 1976, Mr. Rice and Mel McCutcheon purchased Brussels Motorsfrom Frank (Casey) Mc­ Cutcheon. and continued the part- ncrshipuntilMelleftin 1984, when Mr. Rice took over the full responsibility of the business. “Those early years with all the travel and excitement really set the toneofmywholelife," Mr. Rice ays. “After that, it’s hard to slow lown, and I’m always looking for some sort of new challenge.
