Because the kit has all the equipment and simple step-by- step instructions, anyone can create this special wedding cake without prior baking experience. The bride, a friend or a family member can bake the cake using two mixes or a double batch cake recipe. It can be made up to a month in advance and frozen until a day or two before the wedding. Then it can be iced and decorated with flowers, borders and a wedding cake topper. Final assembly of the tiers should be done at the reception site. Tier cakes are perfect for many otner occasions, too. Instructions for decorating special anniversary cakes, festive children’s birthday cakesand others are included in the kit. Kenneth Adams believes his company maintains the personal touch despite the heavy turnover. It’s not like a regular civic-type wedding where you’re in to see the judge and right out again,” he explains. ‘‘We care about the people we’re performing wedd­ ings for and we lock at them as part of a congregation of ours.” In fact, Adamsandother staff ministers often receive requests years later to perform christenings for the children of couples they have married. Wedding Day Services was founded 17 years ago by Rev. B. E. Leslie after he began performing weddings away from the Meadow­ vale Church where he also mini­ sters. It was difficult then to find clergy who would conduct a service in a garden, home or other settings. “It was a need that was realized, and it has grown ever since,” Adams says. While some staff clergy are members of conventional church­ es, both Adams and Leslie are affiliated with the non-denomi- national Christian Church of Cana­ da, and all Christian ceremonies performed by Wedding Day Ser­ vices are non-denominational. The firm also performs non-Christian weddings. Adams ascribes the success of the service to several factors. Couples are not limited as to when precisely they can have their wedding, unlike with church or civic ceremonies. Wedding Day Services will perform weddings at sunset on a mountain top, at the crack of dawn in a park, atop the CN Tower, in airplanes, boats, private homes or even at offices for couples who met at work. Leslie once married a couple at a Rolling Stones concert. Celebrities who have used the service include pianist Oscar Peterson at his home, and singer Stompin’ Tom Connors, who was married on the set of the old Elwood Glover television show during a broadcast.
