cup granulated sugar.
2 teaspoons salt
1 tablespoon cinnamon.
11/2 cups seedless raisins
Peel potatoes, Boil (in enough
water to cover) until soft. Drain
and mash and let cool to lukewarm
and there should be one cup of
mashed potatoes. To scalded milk
add shortening or margarine •and
stir until dissoiv0. Let mixture
cool to lukewarm. Meanwhile
thoroughli—dissolve one teaspoon
sugar in half cup lukewarm water.
Sprinkle yeast on top of water, Let
stand ten minutes. Stir well. To
lukewarm milk-Shorten•ing or mar-
garine mixture add lukewarm pot-
atoes and stir in two cups sifted
flour, beaten eggs, half cup granu-
lated sugar, salt, cinnamon and
well-stirred yeast mixture., Beat
with wooden spoon until well mix-
ed, Let sponge rise, in warm place
fiTe from draft for two hours or
until doubled in bulk.
• Boil raisins until soft iin just
enough water to cover, Drain and
let cool to lukewarm. Add .to. the
sponge remaining three and, three-
quarter cups sifted all" iurpose
flour and lukewarm drained rai-
sins, Stir until well blended, When
dough is stiff enough to be easily
handled turn onto floured' board
and knead -until smooth and -elas-
tic (about '5 minutes). An addition-
al quarter cup sifted all-purpose
flour may be used for kneading' if
required, Place dough in a greased
bowl and cover lightly with a
clean towel. Let rise in a warm
place free from draft for about
one hour or until doubled in hulk,
Meanwhile eetwbsihlegst:ease two 17x11-inch
Punchdown dough and pull sides
into centre, Turn onto floured
board and knead into a ball. Cover
dough and let stand for too min.
