guess what you serve tomorrow if
you prepare Frenched Tenderloin, Po-
tatoes au Gratin, Vegetables, Jardin-
iere, French Ice Cream, Petit Fours
and Cafe Noir,
Trenched (Tenderloin
Wipe tenderloins with clean cloth
and cut crosswise into,. 2 inch slices.
Place on chopping board and flatten
with potato masher, Shake pieces in a
paper bag containing flour, salt,
pepper and paprika. Saute in bacon
dripping about 10 Minutes, Remove
to casserole, add 112 cup top milk,
cover and bake in preheated oven of
350 degrees for 25 minutes.
Potatoes Au Gratin
Heat 1 cup milk on low heat. Make
a paste of 2 tbsps. fat (butter or mar-
garine), 3 tbsps. flour and cup
milk. Blend into hot milk, season with
114 tsp. salt, a dash of pepper and 1
tsp. minced parsley, Pour this sauce
over a greased casserole containing 2
cups cold boiled potatoes that have
been diced. Sprinkle with 6 tbsps.
grated old cheese, then 1 cup dry
crumbs. Dot with 1 tbsp. butter. Bake
hi the oven until mixture is hot—
about 25 minetes. Makes 6 servings.
Vegetables jardiniere
2 cups scraped, sliced carrots
2 cups peeled, sliced onions
2 cups cubed tomatoes
1 cup canned peas
112 cup, Sliced green pepper
Place vegetables in greased easse-

pour syrup into them; continue beat-
ing until MiXtUre is thick. Add 2 tape.

Protecting the Plantation •
There are a number of hazards that
the owner of a plantation of ever-
greens has—such as fire and smother-
ing by grass, deer browsing and
drought, but perhaps the meet insid-
ious is mice damage. The reason for
this is that the plantation looks fine
in the fall but on inspection the
spring many trees are girdled and die
the next year, The mice damage the
small one year old trees and also trees
up to 5 and 8, feet high,
It has been the gerfa-rally accepted
view that the mice do not do damage
until after the snow comes—they
work underneath the snow and the
damage or the mice are undetected
until the next spring, This is not the
case, however, as this fall a plantation
in which the writer is interested had
trees girdled in October. This was not-
iced when the fail places were being
filled in, There has been very little

to authorities in the United States, it
will safeguard the plantations. Many
plariatioas do not need eafeguards as
the Mice are not plentiful except
Where there is bang grass, Plantations
planted on sandy land do not have
mice damage as the grass is sparse
and there is very little cover for the
mice,
The following is a poisoned bait re-
commended for destroying mice;
16 quarts of wheat
1 teaspoon of saccharin
teaePeen atrychnia sulphate
Melted tallow
Dissolve the saccharin and stryehnia
sulphate in 113 cup of boiling water
arid mix this with melted tallow. This
mixture is then Poured into the wheat
and stirred in order that the poison
will be well distributed, A bushel of
wheaton will cover 20 acres of planta- ti
The poison should be put in contain-
ers which the mice can get into but
which small animals and birds cannot
enter, One quart oil cans with the
small holes should he ideal for this—
these can be secured at a local garage,
The cans should be placed in the plan-
tations before the snow comes as they
could easily 'blew around and the
poisoned bait would be spread on the
ground where the birds could obtain it.
If the cans are put out in the snow,
holes should be dug in order that they
will be placed securely on the ground.
Deer Season
The deer season which took place
on November 4th to 7th inclusive in
the Counties of Waterloo, Oxford,
Huron, Perth, Grey and Bruce, went
off very well. As far as we know there
Were no fatalities with men or cattle.
A large number of hunters were out •
as was shown by the number of lic-
enses sold. One issuer who usually
sells approximately.20 licenses sold 165
this year, The "Farmer Deer License"
which allows the farmer a license for
$2,00 was quite popular.
Most of the townships had passed
by-laws to prohibit dogs but there
was a little trouble in several town-
ships where outsiders brought in their
hounds. It is very difficult to estimate
the number of deer shot and there
were not as many deer shot as we ex-
pected. A very rough estimate would
say that 1 in 10 hunters secured a
deer. The best hunting in the Huron
district was in North Dumfries town-
ship, south of Galt. There was several
reasons for the poor hunting—the
mild weather resulted in the deer
being spread out. The bush was dry
because there had been neither rain
nor snow. Snow would have helped in
tracking the deer. Many hunters stay-
ed out on the roads hoping that the
deer would conic to them. Hunting
would have been improved if there
had been more organized driving,

Cream shortening and sugar well,
MIN and Sift flour, baking powder
and salt, and add alternately with
Water to sugar mixture, Fold in stiffly
beaten egg whites. Stir in flavoring
and turn into 2 greased 8x8 inch cake
pans, Bake in Preheated electric oven
of $50 degrees for 20 to 30 minutes,
Cool ea cake rack for 10 minutes, then
turn out and eat in email squares,
Place on cake rack and pour boiled
pink frosting over them, Decorate
With pastry tube using butter icing
or sprinkle with cake deeorettes.
Cafe Noir
Percolate coffee and serve black.

and is there any value in it?
Answer: Paprika is the crushed,
dried, ripe fruit of a large-fruited
species of the capsicum. It contains
sonic Vitamin C arid has a mild flavor.
Sonic capsicum is grown in British
Columbia, but it is native of Europe.
Mrs. W. S. asks; Can we freeze
pumpkin pie?
Answer: Yes, we freeze pumpkin
pie before it is baked or after baking.
The family preference is freezing
pumpkin pie ready for the oven and
then baking the frozen pie at 450 de-
grees for 15 minutes, then reduce to
350 degrees for 50 minutes,
Mrs. N. L. asks: What are the mak-
ings of a club sandwich?
Answer: There are two decks of
filling, 3 of bread. One filling is egg
salad, the second is usually lettuce and
sliced ham, Cut the sandwich in two
triangles. Place a half slice of tomato
on each, a stuffed olive on a tooth-
pick into the tomato and bread, that
is the famous club sandwich.
