Sift together flour, gait, baking soda
and sugar. Cut in shortening. Com-
bine egg, vinegar and 114 cup milk;
beat until well blended. Add all at
once to dry mixture. Stir lightly with
fork, just enough to moisten all the
flour. Knead gently about 112 minute
on floured board. Divide in half. Form
each into a round ball; roll each into
a 114 inch thick round. Place on greas-
ed baking sheet. Cut each round with
a sharp knife into six wedges. Sprinkle
with eugar. Sake at 450 degrees in
eleetrie oven for 10 to 12 minutes.
Old-leashioned Soda Biscuits
2 cups sifted flour
112 tsp, salt
1 tsp, baking soda
113 cup shortening
114 cup vinegar
112 cup milk
Sift together flour, salt and baking
soda, Cut in shortening. Blend liquids
and add ,all at once to first mixture.
Stir lightly with fork just until flour
is moistened, Knead gently about 112
minute on floured board. Roll or pat
out about 112 inch thick for thick
biscuits. Cut with floured 2-inch bis-
cuit, cutter. Place 1 inch apart on
greased baking sheet. Bake at 450
degs. in electric oven for 12 to 15
minutes, Makes about 16 thick bis-
cuits.
TAKE A TIP
When you mix soft doughs for
quick breads, it is not always pos-
sible to decide on the exact amount
of liquid. If too much milk is used
the dough will stick to the bowl. A
little extra flour on the kneading
board may help remedy this.

One of the most intrigoing news

Kitellener Saturday Morning, fellow-
ing a raid by Kitchener ,and other
police on the weli-known, Trail's End
hotel in Conestogo.
The hotel is well known to Many

in the past.
As a result of the raid, 67 men and
two women were arrested at the hotel,

Atinute Coffee Cake
1 cup cooked prunes.
2 cups biscuit mix
113 cup granulated sugar
1 egg
1/2 cup milk
Pit and halve prunes. Combine bis-
cuit mix and granulated sugar, Peat
egg lightly then add milk and stir in-
to dry mixture, mixing well. Turn into
greased 5-inch square pan and top
with prune halves. Stir together top-
ping ingredients of 113 cup brown
sugar, 3 tbsps. biscuit mix, 114 tsp.
cinnamon and sprinkle over prunes.
Bake in preheated electric oven of
375 degrees, about 35 minutes. Cut into
9 squares and serve hot.
Cheese Pin Wheels
2 cups sifted flour
tsp. salt
1 tsp. baking soda
113 cup shortening
11/2 taps. caraway seed
114 cup vinegar
112 cup milk
1 tbsp, soft butter
112 cup grated old cheese
Sift together flour, salt and baking
soda. Cut in shortening. Blend in car-
away seed. Blend vinegar and milk
and add all at once to dry mixture.
Stir with fork just until flour is moist-
ened. Knead 112 minute on floured

.or kneaded too long, scones are
tough,
4. One-hale teaSpoon soda is used with
1 cup sour unlit and can replace 2
teaspoons baking powder and 1 cup
sweet mint.
4. Cake flour may be substituted for
all-purpose flour in the above re-
cipes, If you use pastry flour use
one tablespoon less of milk,
5. Use a pie plate, jelly roll tin or
cookie sheet for baking biscuits,
scones and cookies, otherwise the
baked foods will net brown evenly.
6. To be pure biscuits are cooked
through, open by lifting off the top.
