Christmas. You may prepare more of
the Christmas treats now if you can
wrap them in foil and store in a Home
Freezer or locker space, Imagine the
warm satisfaction of preparing your
own bread and cookies ahead of the
Christmas "rush."
Christmas Pudding
1 cup chopped suet
114 cup molasses
3'4 cup brown sugar
1 cup sour milk
2 tsps. baking soda
312 cups flour, sifted
1i2 tsp. cloves
1 tsp. nutmeg
1 tsp. cinnamon
1 lemon, juice and rind
12 lb. chopped figs
lb. chopeed dates
1 lb. seedless raisins
extra 1.2 cup flour
Mix suet, molasses and sugar. Add
sour milk and baking soda which have
been combined alternately with 31/2
cups flour which have been mixed
with spices, Add juice and grated rind
of lemon. Combine the ?.2, cup of flour
with fruit which has been chopped
together. Mix fruits into batter. Pour
into greased moulds and steam for 2
hours. Serve with hard sauce.
White Fruit Cake
1 cup butter
2 cups sugar
6 egg whites
4 cups sifted flour
4 tsps. baking powder
213 cup orange juice
rind of 1 orange
1 cup bleached raisins
112 cup mixed peel
1;,2 cup shredded almonds
112 cup candied pineapple
112 tsp, almond extract
Cream butter and sugar, Beat egg
whites until stiff, then add to butter
mixure. Work in flour sifted with
baking powder, Fold in fruit and al-
Mends. Turn into greased lined 8" x 8"
x 3" pans. Decorate top with cherries
and some whole almonds, Bake in an
electric oven of 350 degrees for 1i

Dark Fruit Cake
lb. almonds
it: cup shortening
3 egg whites
3 egg yolks
2/2 cup brown sugar
14 cup molasses
1 cup pastry flour
1/2 tsp. salt
1 tsp. cinnamon
tsp. nutmeg
2 cups sultana fraisins
34 cup currants
112 lb. sliVered peel
11 lb. candied cherries
lb. ,candied pineapple
3/2 cup strawberry jam
2 tbsps. rum
118 tsp, soda
2 tsps. water
Cover almonds with boiling water
drain and slip off skins. Place in shal-
low pan with 1 tsp. butter and brown
in moderate oven. Cream shortening,
add brown sugar and molasses and
cream again. Beat in molasses well,
Add beaten egg whites. Add flour,
mixed with salt and spices, reserving
1,4 cup flour to toss, among dry fruit,
Add strawberry jam and rum, finally
water with the soda in it. Stir and
stir the cake batter. Grease and line
1 large or 2 medium pans wih 2
layers of heavy paper. Bake in electric
oven of 275 degrees, for 4 to 5 hours.

3f4 cup mixed peel
1 tsp. nutmeg
2 lemons, rind and juice
1 cup chopped almonds
112 tsp. cinnamon

1 cup grape juice
Chop raisins. Mix ingredients to-
gether thoroughly. Store in jars until
ready for pie, (Not necessary to cook
mincemeat before using for pies.)

Answer; The reason for fruit cakes
being, uncooked in the centre may be:
(1) that old cake tins become dark
and cook the cake on sides and top
before the centre is cooked. These
pans require 3 layers of paper on the
sides. (2) If something has been spill_
ed in the oven the smoke will cause
brownness which will make the cake
appear cooked. (3) If the oven door
is opened frequently it will not allow
the cake to cook in the suggested
time. Remedy: Be sure to use a wood-
en tooth pick or a clean twig from a
whisk to pierce the centre of the cake
before removing from the oven.
Mrs. S. K. says: Why does fruit
cake sink to the bottom of. a fruit
cake?
Answer: All fruit should be dredged
lightly with flour and let stand 4 to 5
hours before cake is mixed. Another
reason may be that the cake batter
is not stirred enough.
Miss J. M. says: We have a strong
molasses flavor from our fruit cake.
Is there anything we can do to lessen
the potency of its aroma?
Answer: Place cakes in a covered
crock. Insert a fresh slice of bread
beside the scake tins every day for 2
weeks.

The cutting of young evergreen

versy, Criticism of this practise comes
from those who feel that a great
wrong is committed each time a
young tree is cut for this purpose. An
understanding of why this is done
should show that such criticism is
unfounded,

mas tree. This is a fast growing tree
which bears seed prolificly and at an
early age. The wood of this species is
of low quality. Its best use then, Is as
a Christmas tree. E grows very well
on some of the poorer soils being re-
forested throughout the province. If it
will grow on suchareas and provide
a short term crop of Christmas trees
it is logical to do so.
Planted in pure stands at six to
eight foot Spacing, the trees develop
a good overall form. When Christmas
trees are cut from these stands it is
recommended that a few of the poorer
form trees be left to grow, serving as
:iced trees which will restock the area.
Scotch Pine have also been used in
mixture with other more valuable
species such as red and white pines
and white spruce. Removal of the
Scotch pine when of Christmas tree
size gives the other pines or spruce
space for further development. If this
cutting is not done all trees' suffer
and revenue is lost. Reforestation has
put thousands of acres of valuable
land back into use. Christmas trees
can be the first of a series of fordt
crops to come from this land. Let us
try to understand rather than criticise
this practise.
