HomeMy WebLinkAboutThe Citizen, 1990-11-21, Page 39Christmas Morning Starters LEMON YOGURT MUFFINS [this dish is low in salt, sugar & fat very good for diabetics] Combine: 2 cups all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 /4 tsp. salt Set aside. In another bowl combine: 1 /4 cup white sugar 2 tbsp, honey 2 eggs 11/4 cups plain yogurt 114 cup melted butter or olive oil 1 tbsp, grated lemon rind Mix and add dry ingredients. Mix. Spoon into muffin tins. Bake at 375 degrees for 15 minutes. While muffins are baking, bring to a boil for one minute: 113 cup lemon juice 113 cup sugar 3 tbsp, water As soon as muffins are out of oven, drizzle lemon syrup over them. Amy McCrea Blyth. CHRISTMAS MORNING WIFE SAVER 16 slices white bread, crusts removed Canadian back bacon or ham, sliced Sharp Cheddar cheese, sliced 6 eggs 112 tsp. pepper 1 tsp. dry mustard Dash of Tabasco 114 cup minced onion 1-2 tsp. Worcestershire sauce 3 cups milk 1/4 lb. butter, can use less crushed corn flakes In a 9 x 13” buttered glass baking dish, put eight slices of bread. Add pieces to cover dish entirely. Cover bread with slices of bacon or ham, sliced. Layer slices of Cheddar cheese on top of bacon. Then cover with slices of bread to make it like a sandwich. In a bowl beat eggs, pepper, add dry mustard, onion, Worcestershire, milk and tabasco. Pour over sandwiches. Cover and let stand in fridge overnight. In morning, melt butter and oour over top. Cover with crushed c.n flakes. Bake one hour at 350 degrees. Let set 10 minutes before serving. Serve with fresh fruit, salads, muffins, or cinnamon rolls. Watch carefully in oven as it cooks fast on the bottom. Super for brunch. This can be halved using a smaller baking dish.
