HomeMy WebLinkAboutThe Citizen, 1990-11-21, Page 38LEMON CHOCOl ATE CHIP MUFFINS Mix together: 112 cup margarine 3/4 cup sugar (white) 2 large eggs grated rind from well scrubbed lemon 1 cup plain yogurt 2 cups all-purpose flour 3/4 cup semi-sweet chocolate chips Bake in greased muffin tins at 375 degrees. As soon as baked - brush lemon juice over hot muffins until all used. Let sit five minutes before removing from pans. Amy McCrea Blyth. FRESH CRANBERRY SALAD 2 cups fresh canberries, ground 1 medium apple cubed 14 oz. can crushed pineapple, drained 3/4 cup sugar 2 cups small marshmallows 1 cup of cool whip (etc.) 1/4 cup chopped pecans Combine all ingredients and serve on lettuce leaf or in glass bowl. May be made day ahead. Diane Radford Blyth RIBBON MOLD Raspberry Layer 1 cup boiling water 1 package 3 oz. raspberry jello 1 - 10 oz. pkg. frozen raspberries Orange Layer 1 cup boiling water 1 - 3 oz. pkg. orange jello 1/2 pint whipping cream 1 can mandarin oranges Lime Layer 1 cup boiling water 1 - 3 oz. lime jello 1 - 8 oz. can crushed pineapple Rasbperry Layer - Pour boiling water on jello in large bowl. Stir until dissolved. Stir in frozen raspberries. Chill until thickened slightly but not set, pour into 8 cup mold. Chill until almost firm. Orange Layer - Pour boiling water over orange jello, stir until dissolv­ ed, cool, gradually stir in whipping cream. Chill until thickened slight­ ly, but not set, add orange seg­ ments with syrup, pour evenly over raspberry layer, chill until amost firm. Lime Layer - Pour boiling water over lime jello, stir until dissolved, stir in pineapple with syrup. Chill until almost thickened but not set, pour evenly on orange layer. Chill until firm.
