HomeMy WebLinkAboutThe Citizen, 1990-11-21, Page 36Appetizers PINEAPPLE CHEESE BALL 1 - 8 oz. pkg. cream cheese 1 - 81/2 oz. tin crushed, drained pineapple 112 cup chopped nuts 1/2 green pepper (chopped fine) 2 tsp. minced onion dash of salt Mix all together. Shape into a ball and pat additional 1/2 cup chopped nuts over it. Nice for entertaining at Christmas or New Year’s. Mary Walden Blyth. VEGETABLE DIP 2 cups grated cheese 1 cup mayonnaise 1 tsp. minced onion Heat to desired consistency and cool. Serve with fresh veggies and crackers. Hallie Hulzebos CREAM OF TURKEY SOUP 1 turkey carcass 4 qts. of water 3 large onions, chopped fine 3 stalks celery, chopped fine 2 large carrots, chopped fine 1/4 cup uncooked long grain rice 1 cup butter or margarine 11/2 cups flour 1 pint half 'n half 3 cups diced cooked turkey 112 tsp. poultry seasoning if desired salt/pepper to taste In large kettle, cook turkey car­ cass with water to make 3 quarts stock. Remove bones, reserve meat for soup. Strain stock, set aside. In saucepan combine onions, celery, carrots, rice and one quart of the stock. Cook for 20 minutes, set aside. In a large soup kettle, melt butter or margarine. Blend in flour and heat until bubbly. Add half ’n half and remaining two quarts stock to butter/flour mixture. Cook and stir until bubbly. Stir in the reserv­ ed vegetable mixture, turkey and seasonings to taste. Heat slowly to serving temperature. Yield 4-41/2 qts. This soup freezes well. Karen Bowles RR 3, Brussels. Blyth 523-4247 Brussels 887-6521 Christmas Day Starters DATE MUFFINS 11/2 cup dates 1 V2 cups water Cook for 20 minutes and let cool. 11/2 cup sifted flour 1 tsp. baking powder 1 tsp. baking soda 112 cup shortening 2/3 cup brown sugar 1 egg 1 tsp. vanilla Sift flour, baking powder and soda. Cream shortening and sugar. Add egg and dates. Stir in the dry ingredients and vanilla. Bake 18 minutes in 350 degree oven. Jo Landon, Blyth. CRANBERRY PECAN MUFFINS Combine: 11/2 cups coarsley chopped cran­ berries 1 /4 cup sugar set aside. Combine: 3 cup all-purpose flour 41/2 tsp. baking powder 112 tsp. salt 1 cup sugar in a large bowl Page 8 Cut 1/2 cup shortening into flour mixture until crumbly. Stir in 1 cup chopped pecans and 2 tsp. grated lemon rind. Beat 2 eggs in small bowl, stir in 1 cup milk. Add to flour mixture, stir ’til just moist, fold in cranberry mixture. Spoon into muffin cups. Bake 400 degrees for 20 minutes. Makes 21/2 dozen medium muffins. Diane Radford Blyth. TEA BISCUITS 2 cups all-purpose flour 2 tsp. cream of tartar 1 tsp. soda 112 tsp. salt 3 tbsp, sugar 8 tbsp, shortening 1 cup or less milk Sift all ingredients several times. Blend in shortening and add milk. Cook in hot oven 450 degrees for 12 - 15 minutes. Bacon drippings can be used for shortening. Very little sugar requir­ ed unless for shortcake. Jo Landon Blyth.
