Beans ’re cooking
For close to a decade, Raymond Scotch
mer, curator of the Huron County Pioneer
Museum in Goderich has been serving
home-baked beans, cooked tantalizingly
over an open fire to visitors at the Thresher
Reunion.
According to Mr. Scotchmer about four
to six volunteers will be cooking 200
pounds of white beans, donated by W. G.
Thompson of Port Abert, over the course of
the three day event. He said it would be
easy to get rid of more, but that would
require more manpower and another
cooking pot, so it might not be worth the
hassle.
Preparations begin at 6 a.m. each day
starting with the cooking of the pork hocks
and the beans are ready between noon and
one. Over the three days the Museum will
use 95 pounds of pork hoes, 18 Spanish
onions, three cans of tomato juice, three
bottles of ketchup, three kilograms of
brown sugar, three pounds of butter, and
salt, pepper and garlic to taste.
The beans are cooked in a 50 gallon cast
iron kettle, which Mr. Scotchmer says, is
usually emptied and cleaned by 4 p.m.
“We serve the beans in a cup and when the
first one is served it doesn’t take long for
the work to get around and then there’s a
line-up.” They used to have a smaller pot,
which he said was empited one year in only
three-quarters of an hour.
In addition to the beans the Museum
volunteers also serve hot mulled cider, and
buttered popcorn, donated by Pioneer Seed
Com. For a couple of years, they cooked
corn on the cob, that they steamed in the
husk on a threshing machine. “It went over
really well, but, it’s hard to get, this late in
the year. We’ll have to see whether there
will be any available for this year.”
There is no charge for any of the
samplings, but contributions are gratefully
appreciated. After expenses donations are
divided between the Threshermen’s and
the Museum.
So if you’ve a hankering for some tasty
homemade beans, keep an eye out between
12 and 1. You’ll find the familiar tripod and
the Huron County Pioneer Museum sign
located in their usual place, across the
street from the saw mill in the back of the
main ball park.
