Here are glimpses of a few of the manufacturers' themes which may be of interest to the busy home- maker. 1. For good flavour, season beans well. Baked Beans 2 cups white (navy) beans 14 lb. pork fat 3 tbsps. brown sugar 3 tbsps. molasses tsps. salt 1/:2 tsp, dry mustard '/i cup minced onion 2 tbsps, catsup 2 1/.: cups water With pressure saucepan: Soak beans in water to cover, overnight. Drain and place in bottom of pressure sauce- pan with other ingredients. Cook at 15 lbs. pressure for 50 minutes. Makes about 6 cups. Braised Short Ribs (An economical meat, cooked delic- iously tender). Brown pieces of short ribs in a skil- let with a little fat; (Do not cover to broWn). Then add tomato juice to al- most cover the meat and cover the pan. Cook in a preheated electric oven of 325 degrees for two hours. Time of cooking will vary, depending upon the thickness of the meat. WEED OF THE WEEK- Cinquefoils Cinquefoils, usually called "Voverty Weeds" get this name from their habit of growing on "poverty" soils- that is, soils which are low in fertil- ity. According to J. W. McRae, Field- man for the Crops Branch, Ontario Department of Agriculture, Cinque- foils-like some people-cannot stand too much prosperity, and the easiest way to control these weeds is to im- prove the soils on which they are growing. He goes on to point out that there are four distinct varieties of Cinque- foils, of which only one-Rough Cin- quefoil-is an annual. Rough Cinque- foil is usually found in hay fields and the seed is an impurity in Tim- othy seed. It has 3 leaves on an up- right hairy stem, The small, bright yellow flowers form a terminal clus- ter. How- ever, he feels that where possible the field should be broken up, cultivated and put under a short rotation of crops. Where this is neither possible nor practical, infested pastures may often be improved by sowing a good permanent pasture mixture and by the judicious use of commercial fer• tilizers. Apparently Cinquefoil can withstand neither prosperity in the form of fertile soil, nor competition* from legumes and grasses.
