Eggs are, what might be called "First Aid" foods. In emergencies, if handled, properly, they can be made into very good dish- es such as omelettes. They make de- lectable desserts—custards and souff- les—if cooked slowly and removed from the heat at the right moment. We talked about custards and souf- fles recently but what about those omelettes? Omelettes are adaptable and allow for plenty of variation. A plain or jelly omelette for breakfast; a western, cheese or Spanish omelette for dinner—or possibly a fruit omel- ette for dessert. Where most omelettes "fall down" is in the cooking. Slow cooking at a low temperature is the secret of 'a successful omelette. There are two main types of ome- lette—the fluffy or foamy, and the French. WAILS. The regular meeting of the "United Woman's Missionary Society was held at Mrs. E. E. Wellington's home on March 4th. The meeting opened with quiet music by Mrs. Whitley. Mrs. Ken Hastle presided for the Wor- ship service, The Theme being "The field is the world, the seed, the Word:" Hymn, "0, For a thousand tongues to sing" was then sung. Mrs. Cecil Grainger gave A reading, "Quotations on the Bible for Africa and S. Amer- ica!' The language without love which was interspersed with scripture pas- sages from Mark chapter 4, verses 2-8, by Mrs. I-Tastie. Prayers were offered by Mrs. G. Brown, Mrs. T. liradnock, Mrs. How- se and Mrs. X. Hastie. It is made by beating yolks and whites separately, adding 1 table- spoon of liquid—milk, water, tomato or vegetable juice for each egg, This liquid is mixed with the yolks, When the greased frying pan is hot (but not smoking), the stiffly beaten whites are folded into the yolks and the mix- ture is poured into the pan. Then the heat is reduced and the omelette is cooked very slowly until set. For a French omelette, the eggs are beaten very slightly, with the requir- ed liquid (one tablespoon per egg), During the slow cooking the mixture is lifted from the bottom as it sets and the pan tipped to allow the under- cooked portion to run underneath, Serve from the pan to hot plates. * * * TAKE A TIP To fold an omelette: Holding the pan with the handle directly in front of you, loosen the omelette around the edges. Now, using a spatula and with the pan tilted slightly away() from the handle, start to turn the omelette away from the handle. Then holding the edge of the warm platter, letting it turn right over so that the underside becomes the top. To test a Fluffy Omelette: Press the top lightly and if there is finger im- pression, the mixture is cooked. * * S. FLUFFY OMELETTE 6 eggs, 6 tbsps. water, 3-4 tsp. salt, 1 8 tsp. pepper. Separate yolks from whites. Beat whites until stiff but not dry. Add water,, salt and pepper to egg yolks and beat, Fold yolks into whites and then pour into hot greased frying pan. Cook over low heat. When the ome- lette has browned on the bottom (test by' lifting edge with spatula), set in moderate oven to finish cooking for 10 mins. Fold and 'serve at once. VARIATIONS OF FLUFFY OMELETTE Jelly Omelette — Before folding, spread with jelly or jam. Chicken Omelette—Add Ye cup of minced chicken to mixture and spread 1 cup between fold. Mushroom Omelette—Add 1 cup of browned mushrooms to egg mixture. Fruit Omelette—Add 1 cup 'diced, drained fruit to egg mixture plus 1 tsp, sugar for a 6-egg omelette to serve 6. BUDGET OMELETTE 1% cups soft bread crumbs, 1% cups milk, 6 eggs separated, salt and pep- per, 1-4 cup grated cheese. Mix milk and crumbs, let soak, then beat smooth. Beat egg yolks, add salt and pepper and combine with bread mixture and cheese. Fold in beaten egg whites. Pour into hot greased pan and cook slowly until firm about 25 mins, Cook in a slow oven for the last 10 mins,—if you wish to brown the top. VARIATION OF FRENCH OMELETTE 1. Mr. Harold King spurt the week- end at the home of Mr. and Mrs. Wal- ter King, Mildmay. Mr. and Mrs. W. C. King spent the week-end in Toronto. Mr. and Mrs. Ernest King returned with them after spending the winter months in Tor- onto: Mr. and Mrs. Alvin Orvis of Wing- ham spent Sunday with Mr. and Mrs. Cameron Edgar. Mrs. W. H. Gregg visited her sis- ter, Mrs. E. Fallis at Fordwich for a few days last week, Mrs. E. W. Carson spent a few days of last week in Toronto. Miss Gwen Ruttan of Harriston, spent the week-end at the home of her parents, Mr. and Mrs. Len Ruttan. Mr. and Mrs. Walter King and Mrs. Gillen of Mildmay called on friends here on Thursday, Mrs. Mohr and Michel of Milverton, visited the former's sister, Mrs. Cloyne Michel and Mr. Michel on Sunday. Mr. Lloyd Harrison of Listowel, spent the week-end with friends here. Rev. Andrew Laing, Woodhull, is retiring from the active ministry of the United Church, He will take up residence in Galt at the end of the conference year, Mr. Laing was a former minister of the Presbyterian Church here before Union from 1917 to 1925, residing in Fordwich where the manse was located. Fordwich and Gorrie Presbyterian churches being being under the one pastorate. Miss Janice Strong of Kitchener, visited her parents, Mr. and Mrs. Wes. Strong on Saturday.
