DOUBLE CELEBRATION - About two hundred friends and relatives from the Sarnia, Grand Bend and Exeter areas gathered at the Camlachie Optimists' Centre to honour Gor- don and. Frances Eagleson on their twenty-fifth wedding an- niversary and Frances' recent graduation from the University of Windsor. Frances received her Sachlor of Arts Degree with a major in Religious Studies at the Fall Convocation held October 4 in Windsor. Those attending the ,graduation ceremony were her husband, two sons Erin and Peter. Miss Grace Eagleson of Sarnia; Mrs. Alma Casten, Mrs. Maryanne Statton and Michael of London. Take Time was read by Mrs. Marion , Kerslake, Mrs. Melva Eckpr in- troduced guest speaker Mrs. Dorothy Griffin, *Administrator of the London. Goodwill Industries. Assyciation. The London Goodwill Industries helps people grow. It ls a nOn-profit people place dedicated to providing opportunities for training and rehabilitating the handicapped. The many things put in their collection boxes are restored by handicapped workers and sold in the Goodwill Thrift Shops, This money generated by the sales, helps write pay. cheques for the handicapped people. There are 10 such shops in London. A film was seen showing the work Goodwill does, and about two people each with their own handicap and how they became involved -with Goodwill, Mrs, Griffin closed with question "What other organization works on the faith of people to employ 135 handicapped and keep the supply coming?" The Exeter Branch Library is celebrating this week in a very special way. The Canadian author Monica Hughes will appear at'the Exeter Town Hall Fri- day, November 21, 1980 at 1:30 p.m. The question that Monica Hughes enjoys ask- ing and answering most in her adventure and science fiction novels is "whapif?' . Speculation and adventure have played an important part in her own life too. Monica Hughes ,was .born in Liverpool, England but she spent her early years in Cairo, Egypt. She „remembers childhood as a lonely time when books were her best friends and she was a voracious reader. By the time she had graduated from school and finished one year of mathematics at the Univer- sity of Edinburgh, the Se- cond World War had started. Hughes enlisted in the WRNS and served in England, Scotland and Ireland. After the war she spent two years in Rhodesia. She came to Canada front there en route to Australia, and she has been here ever since, Today, she lives in Edmonton with her husband and four children. When she isn't 'writing, she works as a weaver and instructor of weaving. Since 1974, she has had A delicious lunch was seried by Mrs, Irene Dunn's grottp. As it becomes popular in Canada, marketing specialists at the Ontario Ministry of Agriculture and Food say Ontario is producing more top-quality rabbits. Most weigh between 1 and 1.4 kilograms (2 to 3 pounds)' dressed 'for market as fryers. Their meat is very tender, suitable for braising, broiling, baking, frying and barbecuing. Heavier animals are sold as roasters. Raw rabbit meat is a fresh pink. It has no skin covering and no fat layer when packaged for retail sale. The choked meat is fine-grained, delicately flavored and light in color, making it suitable for use in many recipes, Rabbit meat is available from specialty meat stores and some supermarkets. If your butcher doesn't carry it regularly, ask him to order it for you about a weeka in advance. Rabbit in tomato sauce i fryer rabbit, cut in pieces 1/4 tsp. salt Ye tsp. cayenne pepper 2 tbsp. vegetable oil 2 large yellow cooking onions, chopped 1 cup shopped parsley 2 cloves garlic, minced 1 can (13 oz.) tomato paste 1 can (10 oz.) consomme Season rabbit with salt and cayenne pepper. In a heavy, deep saucepan, brown rabbit in hot oil, about 10 minutes, Add onion, parsley and garlic. Cover and cook for 10 minutes. Combine tomato• paste and consomme. Add to rabbit mixture. Cover. Simmer for 11/2 to 2 hours. Serve with noodles or wild rice. Makes 4 servings.
