Blueberry Rhubarb Jam
3 c. rhubarb'cut into 1 inch pieces
3 c. fresh blueberries rinsed and drained
5 c. gran. sugar
2 pkgs. raspberry jello (3 oz. Size)
Juice from half a lemon or
2 tsp. lemon juice or realemon
Method:
Mix rhubarb and blueberries (frozen blueberries may
be used) with sugar and lemon juice let stand over-
night, Following morning bring mixture to a boil over
low heat and cook for 12 minutes, Remove from heat
and stir in Jello powder, Put in sterilized jars. Chill
before serving.

Mixed Sweet Pickles London
1 large cauliflowr ( cut in flowerettes)
4 large onions (sliced thin)
15 med. size cucumbers (sliced 1/4." thick with peel
left on)
1 green pepper - 2 tbsp. mustard seed
(chopped in 1" squares) 11/2 tsp. celery seed
2 cloves garlic (optional) 1 tsp. turmeric
4 trays ice cubes 2 1/2 c. white vinegar
1/3 cup pickling salt 1/2 c. water
5 c. sugar
Prepare all vegetable's along with pared garlic in large
container. Sprinkle vegetables with salt. Cover with
ice cubes and leave overnight. Drain well. Add
remaining ingredients and bring to boil. Simmer. Fill
sterilized jars and cover with juice. Seal.

Nine Day Pickles
7 lbs. cucumbers: - washed and cut in chunks.
Cover with brine and let sit for 3 days (1/2 cup pickling
salt to 2 qts. water)
4th day: pour off brine and cover with clear cold water
green food colour may be added,
5th day: scald in fresh water with oz. alum, Then
cover, let sit till next day,
6th day: make syrup
6 c. sugar (you may use part brown)
6 c. white vinegar
1/2 oz. whole cinnamon sticks
1/2 oz, whole allspice
(tie spice in bag)
Pour off the alum water. Then scald in syrup '
7th, 8th, and 9th day: pour off syrup and boil. Return
to pickles for the 3 consecutive days. After the 9th
day they are ready for jars.

Beet Jelly
3 cups beet juice (water in which the beets were
cooked)
5 tbsp. lemon juice Bring this to a boil then add:
1 box Certo crystals 4 cups sugar
Also add 1 package of Kool-aid or Freshie, plus 1-3 oz.
package jello powder same flavor. Grape - raspberry -
cherry - strawberry.
Any of the above can be used. Bring to rapid boil for 6
minutes. Pour into jars and seal. Yield 3 pints.
This is a Western Canada recipe.
