Dressings and Sauces
Blender Ketchup
48 medium tomatoes
2 ripe sweet I' peppers
2 sweet green'peppers
4 onions
3 c. sugar
3 c. vinegar
3 tbsp. salt
3 tsp. dry mustard
1/2 tsp. ground red pepper
1/2 tsp. whole allspice
Ph tsp. whole cloves
1.1/z tsp. broken stick cinnamon
Quarter tomatoes, remove stem ends. Add peppers,
seeded and cut in strips, and onions, peeled and
quartered. Mix. Put vegetables in blender container,
filling jar 3/4 full. Blend at high speed 4 seconds; pour
into large kettle. Repeat until all vegetables are blend-
ed. Add vinegar, sugar, salt, dry mustard, red pepper
and remaining spices, tied loosely in thin muslin,. bag.
Simmer, uncovered, in slow oven (325 deg.) or in-elec-
tric saucepan until volume is reduced one half.
Remove spices. Pour into hot jars. Adjust lids.
Process. in boiling water bath (212 deg.) 10 minutes.
Remove jars and complete seals unless closures are
self sealing type, Makes 5 pints.

French Mustard
1/2 c. flour
1/4 c. mustard (dry)
small piece butter
1 tsp. salt
1 tbsp. sugar
tumeric to colour
Tomato Butter
Good with Beef or Pork
Sixteen large ripe tomatoes, skin and cut-up, Cover
with vinegar and leave overnight. Next morning, drain
vinegar. (I save it for chili sauce).
Add:
1 pint white vinegar (21/2 c.)
6 c. sugar
1 tbsp. pickling salt
1 tbsp. cloves
1 broken cinnamon stick
Put last three ingredients in a cheese cloth bag. Boil
uncovered on medium heat 2 to 3 hours, until thick.
Stir often.

Add boiling water to form thick dough. Add hot
vinegar to thin. This mustard keeps a long time - does
not get hard.
