Easy Forest Torte
1 pkg. 2-layer chocolate cake mix
1-3 oz. cherry jello
3/4 c. boiling water
1/2 c. cold water
3 tbsp. cherry liqueur
1-41/4 or 41/2 oz.instant chocolate piidding mix
2 envelopes dessert topping mix
11/4 c. cold milk
1-21 oz. cherry pie filling
Prepare cake mix according to pkg. directions, (Make
2-9" round cakes ). Let cool 5 min, and remove one to a
serving plate and one onto a sheet of waxed paper or
handi-wrap. (flat sides up). Dissolve jello in hot water
and' add cold water and liqueur. With the tines of a
large fork, prick holes in the layer cakes; spoon the
jello slowly over the warm cakes. Cover and Chill 2 hr.
In a small bowl beat pudding mix, topping mix and
milk until stiff (3-4 min.) Use about 1 cup of mixture
to make a ring 1/2 " high and 1" wide around the top of
the bottom layer. Fill the centre of the ring with
cherry pie tilling, (You may have some left). Carefully
lift the second layer, lay flat side down, atop cherry
filling. Frost top and sides with remaining pudding
mixture, Chill at least 1 hr. (overnight is alright). Gar-
nish with chocolate curls. Makes 12-16 servings.

Pudding
1/3 c. shortening (room temperature)
1/3 c. molasses •

c. undiluted evaporated milk (1-6 oz. can)
1/2 c. each seedless raisins and finely chopped dates
1/3 tsp. each salt and cinnamon
1/4 tsp. each baking soda and nutmeg
In a bowl, cream together shortening, molasses and
egg. Stir in evaporated milk. Add raisins, dates, mixed
peel, graham wafer crumbs,salt, baking soda, cin-
namon and nutmeg and beat until thoroughly com-
bined. Fill six buttered 6-ounce or eight buttered 4
ounce custard cups or individual molds 3/4 full with
batter. Cover custard cups tightly with sheet of foil,
turning down edges. Place cover on pan. Bring water
to boiling, reduce heat to simmer for 30 minutes.
Remove from water, run knife around edge of each
custard cup and turn over and out. These can be made
in advance and stored in the refrigerator. To reheat,
replace in moulds and return to frying pan, add water
and cover and steam for 3/4 hours.
Serve with either:
Clear Lemon Sauce: In a small pot mix well 2
tablespoons cornstarch, 1/2 cup sugar, 1/2 teaspoon
nutmeg. Stir in 13/4 cups hot water and cook stirring un-
til thick. Add 1/4 cup lemon juice and stir until boiling.

Brown Sugar Sauce: Combine 1/2 cup well packed
brown sugar, 1 tablespoon cornstarch and 1/8 teaspoon
salt in a saucepan. Add 1 cup boiling water gradually.
Cook slowly stirring constantly until mixture is thick
and smooth, about 5 minutes. Remove from stove. Add
1 tablespoon butter and 1 teaspoon vanilla. Serve hot.

• Christmas Carrot Pudding
2 c. grated raw carrots 1 tsp. all-spice
2 c. grated raw potatoes 2 tsp. salt
2 c, bread crumbs 1 tsp. soda
11/2 c. fine suet 1 c, large raisins
4 tbsp. milk 1 c, small raisins
1 c, all-purpose flour 1 c, currants
2 tsp, cinnamon. 1 c. dates
11/2 tsp, nutmeg c, mixed peel
1/2 c, red and green cherries
1 c, brown sugar
1 c, corn syrup
Method;
Mix in order given; pour into greased molds, Fill about
2" from top. Cover tight with lid or tinfoil, set on rack
in a steamer half filled with boiling water. Makes 2
large puddings or .4 small ones. Steam large 3 hours
and small puddings 11/2 hours. (This pudding keeps
well in the freezer.)
Sauce:
2 c, brown sugar
2 to 3 tbsp. cornstarch according to the way you like it
thickened
2 tbsp. butter,
Mix well and add 2 c. boiling water cook in double
boiler till transparent then add 1 tsp. vanilla 1 tsp,
lemon juice.
