(Please compare our prices anytime!) 26 Ontario St., S., Hwy 21 (just south of bridge) GRAND BEND 238-8489 Basic Grain Loaf Breads First bowl 11/2 c. warm water 1 tbsp. honey 3 tbsp. dry yeast Second bowl (large) 53/4 c. warm water 1 c. non-instant skim milk powder 1/4 c. blackstrap molasses 11/2 tbsp, sea salt 4 c. unbleached white wheat flour 9 or 10 c. whole wheat flour Dissolve honey in warm water in first bowl, then sprinkle yeast over water. Let this mixture rest until it foams up to double its size. Meanwhile put 1 c. warm water in blender and turn on low speed, add 1 c. milk powder and then another c. of warm water, keeping the blender on low speed, add the salt at this point also. Empty blender contents into second bowl. Use the same procedure for the molasses and remaining 33/4 c. warm water. Add the molasses mixture to the second bowl also. When the yeast mixture is ready, stir it down with a wooden spoon and then add it to the se- cond bowl also. Stir in 1/2 c. each wheat germ, bran, rolled oats, sesame seeds and flax seeds (and . any other grains) and 1/4 c. safflower oil. Stir in 4 c. un- bleached white and 8 c. whole wheat, then scrape down sides of bowl and let mixture rest for 1 hour: Put 2 c. whole wheat flour on board then stir down and turn dough out onto flour, knead. Divide in 4 (cut with knife) then knead each one. Place in oiled loaf .pans. Preheat oven to 350 degrees while dough is rising in loaf pans (let rise until nicely rounded above edge of pans) about 20• minutes.Bake at 350 degrees for 40 minutes or until nicely browned. Mary Morrice Grand Bend Raisin Muffins 1 c. raisins 11/4 c. water Wash raisins, combine with water and bring to boil, turn to simmer for 15 minutes. Remove from stove, pop on a lid and set aside to cool. Beat in bowl Legg 2/3 c. brown sugar 1/2 c. oil 1 tsp vanilla Add 11/2 c. sifted all purpose flour 1 tsp baking soda Sift together 1 tsp baking powder 1/2 tsp. salt Add raisins and liquid last (there should be about 1/4 cup liquid or more on raisins after they have cooled). Bake at 350 degrees, 25 minutes. If your oven runs hot, 325 degress. Makes 1 doz. large muffins Pearl Hicks St. Marys Page 28 Banana Bran Bread Use those black, hopeless-looking bananas for this, the riper the better. The walnuts may be replaced by raisins and you can also substitute rum for the orange juice. 3/4 c. soft butter or margarine 11/2 c. light brown sugar 3 eggs 2 c. whole or flaked bran 3 c. mashed bananas 1/4 c. fresh orange juice or dark rum 3 c. all-purpose flour 4 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 3.1 2 c. chopped walnuts or raisins. Cream soft butter or margarine with sugar and eggs until light and fluffy, then stir in bran. Mix bananas with fruit juice or rum. Sift together flour, baking powder, salt and soda. Add to creamed mixture alter- nately with banana mixture, beating thoroughly by hand at each addition. Fold in walnuts or raisins and pour into 3 greased and floured medium-size pans.
