Form into balls (about 2 tbsp each}, ?oil in crumbs and place on greased cookie sheet. Flatten slightly, then make a thumbprint in the middle. Place a small piece of butter in dent. Place in a moderate oven for 20-30 minutes. Serve immediately. Split Pea Soup 2 qt, water 1 rib celery • 11/2 c. split peas 1 carrot, cut up 1 hambone or boullion cube 1 potato, cut up 1 whole onion salt and pepper to taste Cook 2 hours or until tender. Discard celery and onion. Cut meat off bone. Put the rest through a seive or mash. Add meat and 2 tbsp. butter. Reheat if necessary Swedish Potatoes Serves 8 6 large potatoes, pared 3/4 c. sour cream 3 or 4 oz, pkg. white cream cheese (room temperature) 11/2 tsp, onion salt 1/2 tsp. salt 1/4 tsp. white pepper 2 tbsp. butter Crumb Topping tbsp. melted butter 3/4 c, soft fine breadcrumbs Cook potatoes until tender. Drain and mash until smooth. Add sour cream, cream cheese, onion salt, pepper and butter and beat until light and fluffy. Turn mixture into a well buttered large casserole. To make crumb topping. In a pot melt the butter. Remove from heat and add bread crumbs. Toss gently with fork so crumbs are soaked with butter. Pat crumbs on top of potato mixture to completely cover. Bake at 350 deg. F. for 30 minutes until heated through. Remove from oven and let stand for 10 minutes before serving. This allows the mixture to set a little and serve easier.
