Soup 1. can cream of chicken soup 1 can cream of celery soup 1/2 can water 1/2 stick of margarine 11/4 c, of minute rice (uncooked) Chicken parts 3 thighs, '3 legs, 3 breasts Combine mushrooms, celery and chicken soups and 1/2 can•of water and margarine in a saucepan. Heat, and stir over moderate heat. When warm and thoroughly blended, remove 1 cup of mixture from the saucepan and set aside. Then add rice to the sauce pan and stir. Pour mixture of rice and soups into a baking dish, Place chicken pieces on top. Pour remaining cup of soup over chicken pieces. Bake in 325 deg. oven for 2- 21/2 hours until chicken is tender. Mrs. Kathy Mann Hensall, Ont. Salmon Balls 1/2 lb. tin salmon 1/4 tsp. salt 1/2 c. raw rice 1 small onion 2 eggs 1 c. mushroom soup Pour juice off salmon into a cup. Flake salmon in a bowl, add rice, eggs and salt. Mix well. Chop onion and add. Form into small balls and place in baking dish. Parsley may be added. Add enough water to salmon juice to make 1 cup. Add this to soup mixing well and pour over salmon balls. Bake 1 hour. Scalloped potatoes with a pickle relish make this an ideal dinner course. Laura Cookson St. Marys Tuna Burgers 1 small can tuna 1 can cream of mushroom soup Heat this in pan until warm, then spoon on open ham- burg buns and place on cookie sheet. Then place under the broiler only for a few minutes until bubbly and hot, (Can sprinkle on a bit of pepper), Goes well served with dill pickles or fresh tomatoes sliced for a snack. Carmel Sweeney Zurich Tomato - Sausage Casserole 3/4 c. uncooked macaroni 2 tbsp. shortening 1 lb. beet' or pork sausage cut in 1" pieces 1 med. onion, chopped z tosp, sugar 1 20-oz. can tomatoes 1 tbsp. corn starch 1 tbsp. Worcestershire sauce Preheat oven, to 350 deg, Cook macaroni until tender, drain, well, and place in 1 quart casserole. Brown sausages and onion in,shorten- ing over simmer and add to macaroni, In a saucepan, bring tomatoes to a boil. Add sugar and corn starch and stir. Continue cooking 3-4 minutes, until mixture thickens slightly. Pour tomatoes over the ingredients in casserole. Sprinkle with the Worcestershire sauce. Place in oven at 350 deg. F. for 35 minutes. BUSY DAY IDEA: Prepare Tomato - Sausage casserole a day ahead and refrigerate. Onehourbefore mealtime. must pop into a 350 deg. F. oven for one hour and it's ready to serve.
