Grapes for winter dessert pctober is the month to enjoy blue grapes as fresh fruit right off the vine and also to preserve them, The blue grape season is short, so preserving them allows you to enjoy their superb flavor all winter long, say the marketing specialists at the Ontario Ministry of Agriculture and Food. Freezing is an excellent method for preserving blue grapes. Blue grapes freeze easily and then can be used in recipes requiring fresh •grapes. They retain their intense color and flavor and hold their shape well when thawed. During winter, frozen grapes can be used in any recipe calling for blue grapes such as, juice, jam, jell, pie filling, cobblers, crisps, parfaits or cheesecakes. To prepare for freezing, "wash grapes carefully and drain well. Remove the stems and measure the grapes. Pack them into freezer containers, label, (with the date and amount) and freeze, There is no need to add sugar to grapes for freezing because their high sugar and acid levels act as natural preservatives, Grapes'N Yogurt (makes 3 cups) • 6-oz container plain yogurt 3 tbsp sugar. 1/2 tsp almond extract 2 1/2 cups washed and stem- med Ontario blue grapes 2 tbsp blanched, slivered almonds, toasted Combine yogurt, sugar and almond extract.
